Guisadong Munggo

Mayaman man o mahirap, ang guisadong munggo ay gusto ng lahat. Mula sa mga carinderia sa tabing-kalye at sa mga nakapilang Jollijeep na kinakainan ng mga empleyado sa labas ng kanilang mga opisina, hanggang sa mga natatanging restaurant tulad ng Chef Jessie's sa Rockwell at Bistro Remedios sa Malate, ang guisadong munggo ay may lugar sa kanilang mga menu at sa puso ng lahat. Ibang klase ang demographics ng guisadong munggo, across the board talaga ang drama niya.

 

Nagmula sa bansang India ang impluwensya ng pagluluto at paggawa ng guisadong munggo. Sila ang nagdala sa Pilipinas ng mga iba't ibang uri ng butil na mayaman sa protina tulad ng dhal, garbanzos, at lentejas, bago pa dumating ang mga Kastila sa ating bansa.



Noong bata pa kami, alam namin kung araw na ng Biyernes, dahil ang ulam namin ay guisadong munggo. Kahit hinahain ito linggo-linggo, hindi namin ito pinagsasawaan dahil iniiba-iba ng nanay ko ang kombinasyon ng sangkap at estilo sa paggawa nito.

 

Mga sangkap ng guisadong munggo: bawang, sibuyas, kamatis, hipon, tinapa, talbos ng ampalaya, lechon kawali

Minsan ay masabaw, minsan naman ay tuyo. Misan ay malunggay ang sahog, minsan naman ay talbos ng ampalaya. Minsan ay may tinapa at chicharon, minsan naman ay may hibi o sariwang hipon. Minsan ay maanghang, matamis na hindi maipaliwanag, pero lagi siyang malinamnam.



Ang laging kapares nito ay pritong galunggong, pritong tinapa na galing salinas, na karaniwan ay tunsoy at lawlaw, o di kaya, paksiw na isdang albakora o sapsap. Depende rin ito kung ano ang nahuli ng kapitbahay naming mangingisda. Laging maasim ang paksiw, kaya lagi kong hinahabol ang linamnam at tamis ng guisadong munggo.



Pero siyempre, iba-iba ang tawag nila dito, depende kung saang lugar ka kumakain: Mongo soup with moringa (munggo na may malungay); Filipino mongo soup with chicharon; Cream of mongo soup; Green native munggo beans sautéed with onions and tomato with chili leaves and topped with tinapa bits and pork; Munggo na may bagnet, tinapa at talbos ng ampalaya. Pero para sa akin, guisadong munggo lamang ito at bahala ka na kung anong style ang gusto mong gawin. Narito ang resipe ng guisadong munggo na galing sa nanay ko na maaari ninyong gawin sa inyong mga tahanan.

    I agree with Ben Boga, hindi ako ilocano pero ang ginisang munggo ng kapangpangan hindi tama ang consistency, dry ang preparation, konti ang sabaw and overcooked ang munggo. rnrnI think ginisang munggo is the healthiest peasant dish, better than Italy's favorite peasant food, the pasta or spaghetti or the Chinese' lugaw.
