Champorado: Ang Comfort Food ng Pinoy

Para sa akin, ang champorado ay isa sa mga bukod-tanging mapagpaginhawang pagkain o “comfort food.” Mula pa noong ako’y bata pa, kapag pinagluluto ako ng nanay ko ng champorado, napapatahan ako nito kapag ako’y umiiyak at nagmamaktol. Hanggang sa ako’y lumaki, nagluluto ako ng champorado—lalung-lalo na kapag masungit ang panahon at kung nais kong sariwain ang mga ala-ala noong ako’y musmos pa.

 

Alam ba ninyo na ang champorado ay galing sa bansang Mexico? Ang tawag nila dito ay champurrado—“rrrrrr,” nirorolyo ang pagbigkas ng titik "R." Ang ibig sabihin ng champurrado ay “halu-haluin” sa pamamagitan ng paggamit ng molinera o batidor. Bitbit ito ng mga Mexicanong tripolante ng mga galleon noong panahon ng mga Kastila. Sa Mexico, ang champurrado ay isang malapot at mainit na inumin na gawa sa tsokolate na may halong masa harina, isang uri ng arina na galing sa pinatuyong mais. May halo din itong gatas at sinangkapan ng cinnamon, anise at vanilla. Karaniwang iniinom ito sa almusal na may kasamang churros o di kaya, tamales.  Samantala ang ating champorado naman ay kinakain na parang arroz caldo o sopas.

 

Ang ibig sabihin ng "champurrado" ay "halu-haluin."

 

Ang tradisyonal na ginagamit sa paggawa ng champorado sa Pilipinas ay ang sungsung na malagkit, kung minsan naman ay bahaw o sinaing hindi naubos nang nakaraang gabi. Hinahaluan ito ng cocoa powder (tulad ng markang Ricoa o Van Houten) o tablea (markang Dutché, Antonio Pueo o Alfonso). Karaniwang niluluto ang malagkit sa kumukulong tubig at hinahaluan ito ng tsokolate, asukal at gatas na evaporada. Ang kaulayaw ng champorado sa lamusal ay tuyong lawlaw o tuyong tunsoy, ang alat na nanggagaling sa tuyo ay nag bibigay ng balanse sa tamis na nagmumula sa champorado.

 

"Ready-to-eat" champorado mix

Mayroon ding mabibiling instant champorado mix sa mga supermarket para sa mga tamad at tinatamad. May mga champorado din na “ready-to-eat” na nakapapete na parang cup noodles.  Mayroon ding nabibili na parang sachet na may nakalagay na “just add water.” Mayroon ding chocolate-flavored oatmeal na parang champorado din ang lasa, kaya lang imported nga lang. Dahil sa dami nang mga bagong sangkap na lumalabas sa mercado, maaari na tayong gumawa ng gourmet champorado.
