(SPOT.ph) Cova Tapas Y Sangria, Jupiter Street’s newest hotspot, distinguishes itself from its peers just by being what it is: a tapas bar with satisfying small plates, refreshing sangrias, no DJs on weekends, and no loud music to drown out conversation. It’s meant to be a place where one can kick back away from the loud, crowded clubs in the city.

 

The curved wooden slats are patterned after interiors you'd find in Barcelona and the dark walls transform the space into a modern drinking and dining retreat: Cova’s owners, Tatyana Guevara and Patrick Hesse, took their memories of hanging out in Spain’s numerous tapas bars and opened their own version—one that’s modern but still cozy and laid-back with an adventurous take on the usual tapas plates.

 

The limited menu is largely influenced by the haute cuisine found in Spain's San Sebastian with nods to Mediterranean, French and Italian cooking. What to pair with your sangria? Cova’s Ravioli de Rabo de Toro (P155, tapas; P300, for sharing), surprises you with its creamy Ox tail, foie gras, and shiitake mushroom filling; the Huevos Cabreados (P140) is a mix of salty tones from the sauteed chorizo pieces and texture from freshly-fried shoestring potatoes, while cheese lovers will like the Pintxo de Queso Frito, made with pan-fried gruyere cheese crowned with a dollop of caramelized onions.

 

Sangria gets a refreshing twist at Cova. The Red Sangria (P895 for one liter) won’t overhelm you with sweet flavors while the fruity Summer Peachy White Wine Sangria (P895 for one liter) is a dangerously easy drink to chug down. If you’re feeling indulgent, the fizzy Millionaire Sangria (P1,350 for one liter) made with cava or sparkling wine is definitely worth the extra bucks. “We use premium wine for our sangrias, no cheap spirits,” adds Cova’s Patrick Hesse. Cova is set to add more tapas options to the menu in the next few months.
