Aubergine has a set menu for lunch at P1650+/person and a dinner set menu at P1950+/person. Menu includes salad of Poached Lobster tail with keta caviar, seared foie gras, essence of beef ox-tail, choice of Australian Lamb or French Duck Confit and Duck Foie Gras vallontine, US Angus beef tenderloin, Norwegian Salmon and Greenland Halibut.

Christmas Eve dinner menus start at P1,600 (4-course dinner) with menu items such as Mild-smoked Salmon, Iberico Pierogi, Tuna and Veal, Melbourne Prime Beef Tenderloin, Blue Cheese Beignets and Torched Asian Pear.

The lunch and dinner a la carte menu includes a choice of Duck Liver Foie Gras Terrine with Wagyu, Ox Tongue, Apple Jelly and Julienne; Pan-fried US Scallop Topped with Cepe Mushroom Farce, Roasted Prawn; Warm Canadian Lobster Salad, French Beans, Avocados and Romaine; Roasted Breast, Leg Stuffed with Chestnuts and Duck Liver and Seasoned with Truffle Oil; Roasted Australian Lamb Loin Coated with Fresh Herbs, Lamb and Mushroom Pie, Pear Confit in Red Wine and Sautéed Apple, Braised Cabbage and Sautéed Chestnuts, Grand Veneur Sauce.
