(SPOT.ph) Often underrated because of its simplicity, grilled liempo ranks high on any Pinoy's favorite food list. Proof: you’ll find it almost everywhere—in high-end restaurants, casual dining spots, take-away kiosks, or being grilled on a flimsy parilya at some roadside carinderia. There’s something about a freshly-charred slab of pork, fat and flesh, that’s very comforting, and its aroma alone can make your taste buds sing.
Not an easy feat, SPOT.ph set out to find the best grilled liempos in town. Interestingly enough, we encountered many variations to this Pinoy staple. Some stayed true to the classic inihaw na liempo recipe using a simple asin, paminta, and bawang rub recipe, while others were marinated with herbs that resulted in flavor-packed pieces of pork. And though we know anyone with a grill and some charcoal can whip this up at home, our top finds are so good they just might trump your lola’s liempo.
