Full disclosure: The best cheese pizza our writer has ever tasted is Two Seasonís Quattro Formaggi in Boracay, Aklan. The crust is crispy and almost-not-there thin, you wonder how itís able to hold together the spectacular cheese assault. But it does so, beautifully. With just a hint of snap and a nice shadow of a burnt edge, it allows the four kinds of cheese to take the stage, front and center. What a show: You taste the four cheeses bouncing off each otherófrom milky to salty to creamy, itís all very beautiful.
That said, the Two Season Quattro Formaggi is not available in Manila. So we hunted down the pizza that would give us the same sensational experience. How did we do this? Because the task at hand was, as we mentioned earlier, next to impossible, we limited ourselves exclusively to pizza jointsóno restaurants, no hotels, you get the drift. And then we went down to the most basic cheese pizza on offer, be that a four-cheese, a seven-cheese, or a one-cheese. Youíll be happy to know that what topped this list is a plain one-cheese pizza.
