Full disclosure: The best cheese pizza our writer has ever tasted is Two Season’s Quattro Formaggi in Boracay, Aklan. The crust is crispy and almost-not-there thin, you wonder how it’s able to hold together the spectacular cheese assault. But it does so, beautifully. With just a hint of snap and a nice shadow of a burnt edge, it allows the four kinds of cheese to take the stage, front and center. What a show: You taste the four cheeses bouncing off each other—from milky to salty to creamy, it’s all very beautiful.

That said, the Two Season Quattro Formaggi is not available in Manila. So we hunted down the pizza that would give us the same sensational experience. How did we do this? Because the task at hand was, as we mentioned earlier, next to impossible, we limited ourselves exclusively to pizza joints—no restaurants, no hotels, you get the drift. And then we went down to the most basic cheese pizza on offer, be that a four-cheese, a seven-cheese, or a one-cheese. You’ll be happy to know that what topped this list is a plain one-cheese pizza.
