(SPOT.ph) If there was such a thing as magic, then the Fallen Chocolate Cake at Marmalade Kitchen is it, or close. The cake is soft, moist-creamy, even-with an even softer core that melts away as you put a forkful in your mouth. It's a cuisine-defying masterpiece that falls between the light fluffiness of a soufflé and the chocolatey surprise of lava cake.

 

You’re immediately tempted by the rows of take-home goods.

 

Jars of marmalade and spreads, cookbooks, canisters, pasta are only some of the things you can buy.

 

Marmalade Kitchen is the latest from pastry guru Aileen Anastacio. As the owner of Goodies N' Sweets, Anastacio's desserts have a reputation that precedes them, but her savory options are just as good, albeit in the shadows. A mouthwatering display of desserts front the airy white space, but it’s really brunch and comfort food favorites that take center stage in this café-cum-cooking studio.

Classics stand out with perfect practice and little substitutes: the Cauliflower Tempura (P210) are addictive little poppers that would make you wonder if it’s better than shrimp; the Korean Fried Chicken Wings (P250) are crisp despite the coating of a sweetish fiery sauce; the Chicken Gambas and Egg (P370) is tender, flavorful, and served with garlic rice. The BLT is re-imagined as a tangy rich soup with a long strip of bacon and lettuce leaves. Fresh and smoky notes add contrast to the acidity of tomato, making each spoonful interesting.

Anastacio gives customers a whole treatise on brunch icon, the Eggs Benedict. The Smoked Salmon with caviar (P420) is a sophisticated take on tradition; the Smoked Chicken with Cranberry (P320), an intriguingly sweet rendition; the Royal Benedict (P390) presents affordable luxury with steak and truffle cheese; and the Veggie (P300), a faultless combination of spinach, mushroom, and herbed cheese spread. Still, it’s a true classic that stands out-without effort to boot. The Classic Canadian Ham (P300) shows a perfectly balanced assembly. The generous helping of hollandaise is distinct but only enough to tie the smoky flavors of ham and that richness of egg together.

Marmalade Kitchen's country setup against the urban landscape tempts diners to stay and relax while alternating sips of the BLT and bites of the Eggs Benedict. On one side, near the entrance, are shelves full of take-home versions of Anastasio's creations: flavored pastas, sauces, even food-inspired home scents. There's an annex at the back of the space which Anastacio plans to use as a studio for her to host cooking classes and seminars. The place is a homey hangout for those who prefer quiet afternoons, but the best part is you can take some of Anastacio's talents home, too.
