(SPOT.ph) It sounds like something Rafiki would say when he blesses new-born, heir-apparent lions. Or maybe something in Beckinese. Waffingka. It’s the latest food hybrid to stun Manila and this one is 100% local.
Waffingka comes from the union of waffles and bibingka. It’s essentially bibingka batter cooked on a griddle then topped with butter and fresh coconut. The taste comes from that familiar light, egg-y cake, but with a well-loved crunch.
The Waffingka is available at Cafe + Bar / Da.u.de, the second branch of the Da.u.de Tea Lounge, at Santiago Street corner Singian, Makati City.
