Filipinos are extremely familiar with bone marrow-we've been fighting over it during family dinners whenever steaming hot bowls of bulalo are involved. These days, more and more restaurants are introducing diners to bone marrow served and cut in the cross section, exposing the long slippery slide of marrow and making it easier for us to slurp up all the lingering bits of glorious nature’s butter. There's something pleasurably primal about sucking on creamy, rich bone marrow that's slightly nutty and sometimes sweet. We pick out a few restaurants around the metro that serve bone marrow just the way we like it.

Roasted Bone Marrow and Beef Mole Asado with Toasted Brioche and Sea Salt (P445) from El Cirkulo

Arguably one of the most popular bone marrow dishes in the metro, El Cirkulo's take has become a classic favorite among marrow lovers. Use the popsicle sticks provided and have fun scooping out buttery marrow from the bone and lathering it on a toasted brioche slice. Then, lay on sweet-savory beef mole asado and sprinkle sea salt on top-it's heaven in every bite.

Indulging can be guilt-free, too, thanks to The Farm Organics' Grilled Organic Bone Marrow. Sure, it's still pretty heavy on the calories, but it's got loads of protein and flavor, which is never a bad thing.

Besides the usual bulalo components-beef shanks, corn, cabbage, pechay-you'll get a ginormous open leg of marrow, which is obviously the star of this bulalo show.

The menu at Pamana is chock-full of bulalo dishes, and why wouldn't it be? Bulalo is just that integrated into Filipino cuisine! A standout on Pamana's menu is their Baked Bone Marrow with Adobo Pate and Toast, and it’s described as their native version of foie gras. Read: definitely worth trying. Slather creamy marrow and adobo flakes on top of crisp bread, and you've got the perfect appetizer to get you warmed up and ready to go for the rest of the meal.

Plop the steak on a tortilla, top it with marrow and salsa, then roll it up, take a bite, and savor each rich, cholesterol-tingling mouthful.
