(SPOT.ph) The lure of these chocolatey non-brownies is a mysterious one. Whether you’ve seen the beautifully monstrous slabs at a bazaar, had one with a flat white at Toby’s Estate, or tasted it at a foodie friend’s birthday party, a bite of Bucky’s is like falling deep into a rabbit hole, an addiction that’s hard to climb out of.

But first, what is Bucky’s? It’s been a few years since Bucky’s launched, but people still ask the question. It certainly looks like a brownie-a huge one at that-but they vehemently deny that they’re anything but distant relations to the cake-cookie treat. Owner and head baker Miguel Vargas explains that Buckies are the marriage of three things: flourless chocolate cake, fudge, and brownies. A humble baking business that started with a few notable flavors-the Original Buckies (chocolate and sea salt), Buckies n' Cream (chocolate and cream), and Chunky Blonde Buckies (oats, graham, and cocoa liqueur)-has steadily grown. From a home-based business to supplying popular coffee shops like Toby's Estate, Bucky's now has its very own space, it’s own rabbit hole. Finally.
Bucky's Counter is the manifestation of a dream. "Having a place of our own was definitely one of our goals. It was actually kind of impulsive when we decided to put up shop here," explains Miguel. "My wife, Raisa, and her sisters were on a site visit for their bridal shop business, and I asked about the vacant spot beside them. It was available, and I immediately grabbed it with no concept to speak of."

The café-slash-Buckies boutique on Aguirre Street, Parañaque looks like your everyday hipster third-wave coffee shop-minimalist and industrial, with copies of Monocle lying around-but it’s a laidback place where you can come in, order a few boxes of Buckies to take home, then sit back and have a cup of Yardstick coffee. Bucky's Counter lets you get more for your Buckies. You can turn your favorite flavor into a waffle and choose from indulgent add-ons like Casa San Luis Salted Caramel (P40), Vanilla Crème (P30), Cream Cheese Frosting (P30), and a scoop of Carmen's Best Madagascar Vanilla Ice Cream (P150). Playing around with different flavors and add-ons every time is half the fun.

Though Bucky's Counter is still on soft opening, there are plenty of things to look forward to. Miguel playfully mentions a Milk Monster variant in the works, an ode to childhood and that fondness we once had for eating powdered milk. We can also look forward to seeing Half Baked Buckies, Milo Dinosaur Buckies, and Bucky's Milkshakes in the near future.
With so many Buckies options, old and new, under one roof, we find ourselves sinking deeper and deeper into this rabbit hole.
