(SPOT.ph) City of Dreams is beyond festive this February with its simultaneous first anniversary and Chinese New Year celebrations. One of the integrated casino-resort's offerings is a month-long promotion of Cantonese fare at its signature Chinese restaurant, Crystal Dragon. Yes, the Year of the Red Fire Monkey is starting on a good note.
They've made two set menus available for this entire month: the Elegant Menu (P3,690++ per person for a minimum of four persons) and the Treasures Menu (P5,690++ per person for a minimum of six persons).
The Fish Yu Shang before tossing
Prosperity Salmon Fish Yu Shang
Both sets feature the Prosperity Salmon Fish Yu Shang, a salad ceremoniously tossed by throwing the ingredients as high as you can with chopsticks. The medley of salmon, jellyfish, red ginger, golden bamboo shoots, purple cabbage, crushed peanuts, plum sauce, and wonton crackers guarantees a cooling and crunchy mouthful. Each ingredient represents a wish, and the higher you throw is supposedly proportional to the quality of year you'll have. This salad is a great big mess, but it's also incredibly delicious.

The Double-boiled Baby Abalone with Chicken and Cordycep Flower in Ginseng Soup is a balance of flavors that whets your appetite for what's next: the Steamed Cod with Baby Cabbage in Supreme Soy, Hong Kong-style. The lightly seasoned fish, which symbolizes abundance, is complemented by a rich and savory broth that will make you instantly fall in love with this dish.
Make sure you enjoy the Oven-roasted Fragrant Chicken Coated with Sesame Seeds with the sweet sauce. It's a simple combination of oyster sauce and barbecue sauce, which counteracts the slight saltiness of the chicken.
Spices and textures collide in the Stir-fried Prawns with Butter, Curry Leaf, and Crispy Egg Threads, which is crunchy at the base, smooth and glazed on the outside, and tender on the inside. To the Chinese, prawns symbolize happiness and good fortune—which we hope is accurate after all the shrimp you'll consume once you have this dish.
Wok-fried Glutinous Rice
The Wok-fried Glutinous Rice with Wild Rice and BBQ Pork Meat, meanwhile, is meant for unity and gathering. The rice is cooked al dente and the Chinese chorizo stands out with its robust flavor.
Sweetened Red Bean Puree
For dessert, there are two options: a generous Sweetened Red Bean Puree Served with Coconut Ice Cream and the Double Favor Chinese New Year Nian Gao Platter. The latter is recommended for its variety. It features tikoy prepared three ways—covered in crushed peanuts, sandwiched between taro and sweet potato, and served in a crispy nest with a side of fresh fruits.
Both menus come with traditional Chinese tea and some of the dishes are available à la carte.
Crystal Dragon's new offerings are designed to ensure an auspicious year, but when you see this delicious spread, you know that luck isn't too far off.
