(SPOT.ph) Whoever invented the meatball deserves to be sainted, have a monument erected in his or her honor, and be revered with a month-long festival staged to celebrate the pure genius of this masterpiece. The meatball's origins, however, are unclear, with each country claiming its own version. The genius may be forever an unsung hero—but a true one, nonetheless.
At its most basic, a meatball is wadded-up meat, spices, and seasoning, held together by a binding agent (usually egg). At The Meatball Revolution, where life is quite literally a ball, this humble dish is anything but basic. The ball's in your court (obviously, it's also a place that invites tons of puns), thanks to their customizable, start-from-scratch meatball experience.
The D.I.Y. meatball experience (starts at P295) is a four-step process. First, pick a carb: bread (baguette or slider buns), spaghetti, or rice (java or steamed). You can even go "naked," which allows you to just enjoy the meatball as is—perfect for purists.

Then, choose your meatball. Each order consists of three pieces and varieties range from classic (Classic Beef, Pork Pimiento, Smoky Chicken, Swedish Pork and Beef, a meat-free Tofu-Mushroom Veggieball) to premium (Spiced Lamb, Chunky Shrimp, Cheesy Stuffed Beef Balls). Slather it with homemade sauce—Parmesan Béchamel, Mushroom Gravy, Classic Marinara, Creamy Tomato, Smoky BBQ, Blue Cheese, or Roast-nut Pesto.
You can go even crazier with toppings, like potato crisps, jalapeños, fried egg, cheddar cheese, Monterey Jack cheese and onion rings, crispy garlic slices, pickled veggies, sliced cucumber, fresh tomato, grated Parmesan and sautéed onions, crispy bacon strips, crumbled blue cheese, shaved Grana Padano, mozzarella, chicharon and pulled pork. We can go on and on.
Given the endless possible combinations, The Meatball Revolution might actually become a favorite for those on a mission to nail that perfect bite.
If you're feeling overwhelmed by the choices, you can also go for their tried-and-tested chef's selections. Hardcore fans of pork should check out Pig Out (P375), their "pig-ception" sandwich composed of bacon-wrapped Pork Pimiento meatballs with pulled pork and smoked barbecue sauce on a soft baguette. Their baguette successfully creates the right balance of crusty, chewy, and tender and it's the perfect canvas for the sweet peppery pork.
For the meat and rice lovers, Breakfast of Champions (P305) is the -silog (as in ballsilog) we never knew we were missing: Swedish Pork and Beef meatballs (with more peppery heat than their classic meatball) served over java rice with mushroom gravy, crispy bacon strips, then topped with a fried egg.
Chicken Run (P305), meanwhile, features smokey chicken meatballs on slider buns, topped with classic marinara sauce, pickled veggies, melted mozzarella, served with potato crisps. Pro tip: Ask for the veggies on the side so you can control the level of acidity on your sandwich.

Make sure to make room for their incredible starters, like the addictive Parmesan-Truffle Potato Wedges (P195) and the creamy, cheesy magic that is their Truffle Macaroni & Cheese Balls (P365)—the latter option is the best balls you'll ever put in your mouth. If you need an appetizer for sharing, their Tower o' Onions (P225) is a generous stack, battered just right, with the onions crunchy and sweet.
If you can manage, shift over the contents of your bursting stomach and don't leave The Meatball Revolution without having a Sandwich Cookie (P95/sandwich, P275/three). Their cookies are freshly baked and served with your choice of homemade ice cream. Choose between a butter cookie, gingersnap, dark chocolate cookie, peanut butter, or a snickerdoodle to pair with either their unusual ice cream flavors: brown butter sage, calamansi, spicy cayenne, caramel, banana-rum, or maple bacon. As always, if you can't trust yourself to make a choice, they also have tried-and-tested sandwich cookie combinations that will satisfy your sweet tooth.
