Ippudo's New "Light" Ramen Packs a Heavy Flavor Punch
It's light yet super tasty!
(SPOT.ph) Whether the air is chilly or the sun is shining, we are always in the mood for ramen. But admittedly, there are days where we crave something a little lighter than the usual pork-based, tonkotsu broth. For those times, Ippudo has the new Mushroom Ramen (P420), which will be available in all branches starting February 18.
The Mushroom Ramen is the first ramen by Ippudo that uses a non-pork broth base. The refreshingly light but tasty bowl has an umami-rich broth made with fresh local mushrooms and infused with miso paste and garlic oil for that flavorful punch. It's then topped with silken Japanese tofu braised in pork oil, ajikikurage, spring onions, and bean sprouts. But the real star of the show is the fried mushroom trio of shimeji, enoki, and white button mushrooms, giving this ramen an earthy, crunchy kick. You won't even notice the lack of pork with how flavorful this bowl is.
