(SPOT.ph) In case you missed it, Beso Beso has relocated to a new home along Chino Roces Avenue Extension in Makati—and this time around, the Chef Rob Pengson-helmed restaurant flaunts a more refined space (and more parking!). But what really matters is the food, as Chef Rob presents his signature takes of Filipino cuisine, taking inspiration from our complex history and employing European techniques where necessary to create dishes you won’t find anywhere else.
Of the dishes exemplifying this is the Adobo Paella (P495), which is a paella with the flavors of the Filipino national dish brought forward via an adobo stock, adobo oil, and an adobo sauce that’s aged for 15 days. They also make a novel take on classic Buko Pie (P250), which uses coconut in the crust, in the filling, in the whipped cream, and in the garnish for a crisp, nutty bite.
