The Earl Grey Midnight Cake is made with nine-hour cold-brew Earl Grey tea; chocolate from Davao, Batangas, and Agusan; caramel chocolate cremeux; tablea glaçage; roasted cacao nibs; salted walnut nougatine; and Benguet lemon curd. It sounds like a mouthful, but take a bite and you'll see how all the elements come together beautifully: the tea adds a bergamot-flavored depth to the chocolate, the caramel and walnuts reinforces the chocolate's richness, and the citrus contributes just enough brightness to the mix.
