(SPOT.ph) Not that we need external validation to know that Filipino food is truly great stuff, but it's always worth celebrating when our cuisine gains recognition on a global scale. And you'll want to do just that, as two Filipino restaurants have landed on no less than The New York Times' 2021 Restaurant List: Archipelago in Seattle, and Kasama in Chicago!

These are the Filipino Restaurants on The New York Times' 2021 Restaurant List:

Archipelago in Seattle is known for their modern Filipino eats by Filipino-American chef Aaron Verzosa, and Filipino-American artist and designer-restaurateur Amber Manuguid. Think stick-to-your-ribs lugaw with Alaskan spot prawns and weathervane scallops; and savory plates that include a crispy pork belly with rice tinged with black truffle and dinuguan.

Kasama, on the other hand, is owned by real-life partners Genie Kwon and Timothy Flores, and they cook up up eye-opening dishes with Filipino flavors and elements. Just some of these are a sandwich with grilled longganisa, pickled green papaya, and giardiniera mustard; and a small plate of pork belly with crisp, bubbly skin, paired with a piquant radish-jicama salad to cut against the pork's richness.

The New York Times' 2021 Restaurant List is the publication's roster of 50 dining establishments in America that they're "most excited about," as selected by "critics, reporters and editors" around the country.
