Dubai Chewy Cookies? Many would argue it's anything but a cookie, not even Levain-style cookies, as first impressions would give. These no-bake cookies feel more like the lovechild of a mochi, graham ball, and a Filipino kid's childhood favorite, chocolate marshmallow pie.
At its most basic, a Dubai Chewy Cookie is built in layers: a gooey marshmallow exterior made by melting marshmallows and mixing them with cocoa or chocolate, wrapped around a filling of pistachio cream and crunchy kataifi. These are assembled by forming the pistachio filling into balls, stretching the marshmallow mixture over them like shrink wrap, then rolling everything in cocoa powder. The cocoa adds depth, sure, but it also serves a more practical purpose: keeping the cookie from turning into a sticky disaster (unless you’re eating it straight from the refrigerator).
As for who’s to blame for yet another Dubai chocolate resurgence, here’s the plot twist: it didn’t even come from the origin country. The Dubai chewy cookie trend actually started in Korea—and, according to reports, K-pop idol Jang Won-young of IVE had a major hand in turning it into the global sugar rush it is today.
It’s gotten so big that several shops—mostly SMEs—across the Philippines have happily hijacked the trend, making it accessible for everyone who’s curious… but not that book-a-flight-to-Korea curious.
