Goxo Pops Up at The Balmori Suites with an À La Carte Menu

(SPOT.ph) Goxo—Michelin-recognized and freshly anointed as one of SPOT.ph’s 50 Great Restaurants of 2025—is expanding from its 12-seater life in Salcedo to set up a pop-up at The Balmori Suites Chef’s Table. If you’re unfamiliar, this Rockwell series lets invited chefs play outside their usual kitchens with limited-time menus.

For this pop-up, Goxo's Chef Albert Xavier Mendoza brings his Basque-leaning philosophy but expresses it through Filipino ingredients. He draws from Japanese sensibilities too: “There’s a certain parallel between Japanese and Basque cuisine. Both focus on letting the ingredients shine,” he says.

From February 6 to March 22, Goxo is doing something it’s never done before: ditch the prix fixe menu (tasting menu) rigidity and go fully à la carte. Yes, you’re finally allowed to choose. According to Chef Albert, this menu pulls from Goxo’s greatest hits across previous menu series.

Since the menu lets you choose freely, consider this gentle lecture on what's recommended. Start with Jamón Talakitok, Goxo’s pescetarian answer to Spanish cured ham. Follow it up with the Hamachi Sashimi, where mustasa (mustard leaves) step in for wasabi, and a roasted anchovy jus replaces soy sauce. Other dishes available at the pop-up are the Foie Gras Sando, Mollejas, and other tapas like the Tartare, Iberico, and the Crab, Uni, and Anchovy.

Just take note: especially for the lovebirds planning to celebrate Valentine's Day at Goxo's pop-up at The Balmori Suites, they're going back to their prix fixe menu roots, available only from February 13 to 15.
