(SPOT.ph) There’s something about a good cheeseburger that feels timeless. It’s almost proof that no matter how much attention we as a culture give to, say, fine dining, we’re eventually and reliably going to look for food that’s uncomplicated and visceral. At the same time, the burger is a presentation of food so whole and specific that it has surpassed its own category—it is, in the end, a sandwich—and carved for itself a completely separate identity. Sure, that feels like a lot to say about burgers, but one would have a lot to say when one has spent just a little under three weeks trying over twenty versions of them.

But compared to our last round, we did learn a lot more making this new list, and in not very much time. To be precise, we learned that the burger game has changed dramatically, simultaneously going back to basics and raising the bar. Maybe we should have taken the hint as soon as our chef and restaurateur friends started recommending names we’d never heard or ever associated with burgers; we definitely knew by the time we looked up addresses, spanning Makati to Marikina.

On our coverboy: One of the pioneers of the now-ubiquitous restaurant mural and a self-styled burger baron, the Filipino-Polynesian Paeste derives his energy from potential, always thinking of what gives an ordinary thing its star quality.
Ultimately, we took every suggestion to heart—yes, including from Redditors—and quickly discovered that the best thing to do was to test each joint’s individual idea of a baseline burger. This does end up giving us a wider range than normal, going from regular patties to smash; single patty to double; potato buns to brioche; cheese sauce to burger sauce to dijonnaise; tasting for the ratio of smokeyness to saltiness to acid and heat if it had it. It gets a little nuts, but in the end, it’s about how well these different elements play together in terms of overall flavor, texture, and bang for your buck. That said, some of these names may surprise you as much as they did us.

All SPOT.ph Top 10 lists are researched, paid for, tested, and selected by the writers and editors. They are discreetly conducted without any notice made to the establishments or their owners.

Here are the 10 best cheeseburgers in Metro Manila right now:

10. Toka Double Cheeseburger from Toka Wine

Perhaps the only reason Toka Wine’s Double Cheeseburger (P480) opens our list is that it’s such a specific take—a very good one, but specific. It comes wonderfully packaged in a lightly steamed bun, as well as cheese that looks like it happily draped itself over the perfectly seasoned, double serving of beef patties. Skewered on top are a pickled pearl onion and a baby cornichon, both of which provide the welcome option of a touch of acidity. It becomes very obvious after one bite—with everything on it, of course—that this burger was made to go with wine. And you know what? We’re game.

Toka Wine is at 141 Katipunan Avenue, Quezon City.

9. ShackBurger from Shake Shack

Of all of the more established names in the burger game to resurface, Shake Shack remains constant. This go-to, while not gourmet, still feels like a step above other fast-food options. The flavors may not be as punchy as those of our other contenders, but it’s still well-rounded. What puts the ShackBurger (P315) a cut above the other old standbys is how well this chain keeps its bread; others let theirs go dry and unpleasantly crumbly, thinking that we won’t notice when it’s smothered in cheese or sauce. But you can’t hide bad buns.

8. TMB Burger from TMBrew + Bistro

There is something distinctly thoughtful about this cheeseburger. The choice of lettuce doesn’t disrupt, even visually; the bun has a great squish to it without being soggy; and, again, the consideration of keeping the pickled red onions off to the side is much appreciated. Plus, you can just see ground chunks of black peppercorn winking at you from under the melted cheese. It’s salty, it’s steamy, it comes with fries whether you like it or not—these are a little hit or miss depending on the day—but TMBrew + Bistro’s TMB Burger (P575) always manages to hit the spot, even in the rising sea of smash burgers. Considering they do so many other dishes so well, the Manila Baker didn’t even need to do a burger, and yet they’ve presented us with one that absolutely hits.

TMBrew + Bistro is at G/F Imperium, Capitol Commons Park, Estancia, Capitol Commons, Pasig City

7. Oklahoma-Style Smash Burger from Flipside Burgers

This is where things get interesting, for many reasons although some might have been clued in as early as number 9. The game has changed so much that every establishment’s idea of a “basic burger” is so different now; even Flipside offers an alternative to this particular menu item, the main difference on paper being the addition of lettuce and tomato. But their Oklahoma-Style Smash Burger (P295) shares a similar quality to Shake Shack in that, while there are similar burgers with more oomph, it is nonetheless well-rounded and demonstrates a good understanding of proportion and flavor.

6. Cheeseburger from 717 Deli

The Cheeseburger from 717 Deli: We'd never gatekeep something this good..

Sure, you’ve had their Roast Beef and/or their Philly Cheesesteak—they’re not called a deli for nothing. But we strongly advise you not to sleep on their Cheeseburger (P350). The way the patty is cooked lies somewhere between fat flame-grilled tradition and the sensation that is smashing, creating both incredible juiciness and a sufficient smattering of a Maillard reaction; the latter is then echoed in the charismatically dark brown bun. Let’s put it this way: We’re almost glad 717 Deli is as tucked away as it is, far from the madding crowd, but we would never actually gatekeep something this good.

717 Deli is at 3/F Fox Square, Connecticut Steet, San Juan City.

5. Cheesy Macy Burger from Macy’s Burger

Cheesy Macy: Fresh and messy (pronounced Macy? Lelz) in the most fun way..

Should we apologize for two hidden treasures in a row? Maybe, but you’ll forgive us when you have your Macy’s fix. Yes, it’s along one of the smaller Marikina streets, and yes, you may have seen other names in this location that have gone more viral, but Macy’s is simply that girl. While you can opt for delivery within reason, paying a visit makes it very clear that you’re dealing with people who know what they’re doing. The vibrant storefront, the incredibly on-the-ball staff, the considerate fixture of an open corner sink, and the impressive cleanliness despite all the motoring activity out on the road all support what is, on its own, close to the platonic ideal of a burger. The Cheesy Macy Burger (P180/ala carte, P280/meal) is somehow both fresh and messy in the most fun way, and indulgent without centering indulgence. They offer gloves, but why would you want to miss out on licking the cheese sauce from your fingers when it’s the kind of burger a balikbayan would cry over?

Macy’s Burger is at 124 Bantayog Street, Concepcion Uno, Marikina City.

4. Cheeseburger from Bun Run

San Juan's pride, the Cheeseburger from Bun Run: Deceptive simplicity..

This San Juan star is known for its bright pink facade and delightfully left-field items, but they’re all trimmings and branches that find firm footing in a solid core menu. Perhaps what we love most about Bun Run’s take is its deceptive simplicity, which seems to pique the interest of burger lovers of all ages, but especially the surrounding school crowd. (Yes, teenagers fill up the little shop a lot, but beyond eating, they’re intently watching the kitchen, asking the cooks questions, and unabashedly expressing their delight over ingredient prep. It is a beautiful thing.) We see this in practice in their Cheeseburger (P259), what with its in-house mastery of salt, fat, acid, and heat. For this reason, it lands at a highly respectable number 4—it’s one of the best gateways to better burgers.

Bun Run is at 191 A. Mabini corner C.M. Recto, San Juan

3. House Burger from Tyler’s Café

House Burger of Tyler's Cafe: A shocking discovery..

This one shocked us, too. This all-day breakfast darling did not have to go this hard, but it was clear from the first bite of the House Burger (P390) that for many people, this is what they would think of when they hear the word ‘burger.’ It is much more than a safe bet, with its many but only slightly varying textures creating harmony rather than homogeneity—harder to achieve than you think—and the fun addition of arugula gives it a brightness that prevents one from feeling as weighed down as one normally would when wolfing down a cheeseburger. If this burger was a person, they’d be the kind you bring home to meet your mother.

Tyler’s Café is at 319 Katipunan Avenue, Quezon City.

2. Regular Smash Burger from Scratch

Scratch's Regular Smash Burger: Both crispy and juicy, with a kick of acid-sweet..

We knew Poblacion wasn’t going to go down without a fight, so this one was much less of a shock. Scratch knows how to go over the top then rein it back into believability; you can almost taste the decisions that went into developing their Regular Smash Burger (P360). It is a little more salt-forward, but then cycles through other sensations—it’s somehow both crispy and juicy, with a kick of acid-sweet that’s cushioned by a steamed bun with just enough give. It’s not a burger that resists you, but it doesn’t just submit either; it is consistently its own thing from the first bite to the last, without being too crazy. Maybe the craziest thing about it is that we’re not eating it every other week.

Scratch is at 5666 Don Pedro Street, Poblacion, Makati City.

1. Cheeseburger from Love! Burgers

This is another case of We Almost Didn’t Want to Tell You. Operated out of a garage along a residential street in Makati, Love! Burgers’ Cheeseburger (P385) hit us like logs from the back of a truck in Final Destination. There is a compelling charm not only to its location, but to the whole look of the burger; the coziness of a mildly wrinkly steamed bun against the glisten of beef fat and melted cheese, and the peekaboo freshness of in-house pickles and perhaps the perfect burger sauce. Overall, it is straight-up unfair that there is something this good—punchy on every front without being overwhelming, and worth every second you might have to wait for it and more—at this price point. Here, you can taste genius at work—or at the very least, a quiet, sturdy confidence that the man also behind Bake Scout just knows his shit. We’d ask you to pardon our language, but you’ll be mumbling expletives outside of this guy’s garage, too.

Love! Burgers is at 8 Mola Street, Makati City.
