Cheese to You
California isn't likely to be the first place to pop into your head when you think of cheese, but the Golden State has been steadily building a reputation for making the kind of cheese that's good enough to win awards (yes, there is such a thing as the World Cheese Awards).
SPOT.ph recently got to try some dishes made with California cheeses at Lolo Dad's Brasserie in 6750. The three-course meal started with a Romaine Lettuce Soup with Silver Lake Sharp Cheddar and Smoked Salmon Bruschetta, the soup a perfect combination of freshness from the lettuce and creaminess from the cheddar. The Baked Pancetta and Rigatoni Pasta, made with Cheswick Colby Jack cheese, was satisfyingly hearty, but the star of the meal was the Mushrooms and Fresh Spinach Pizza with Pepper Jack, Swiss, and Provolone by California Select Farms. The meal was a decadent demonstration of the versatility of cheese and the variety available from California-based cheese makers, apart from proving that California cheeses can be an excellent alternative to those from Europe.
