(SPOT.ph) What is a Filipino meal without rice? Oakwood Premiere Joy-Nostalg in Ortigas recognizes this with its special World of Rice Toppings menu at Oakroom, Oakwood’s flagship restaurant. With 10 new dishes this year, chef Jerome Cartailler takes inspiration from rice-eating countries like Korea, Vietnam, and Iran just to name a few.
The Pineapple Shrimp Fried Rice (P555), inspired by Hawaii, has loads of pineapples and ham. We often see pineapples in burgers and pizzas, but in this case, pineapple tidbits are mixed with rice along with shrimps and eggs for full Hawaiian flavor. The tropical fruit lends the dish a nice sheen of citrusy sweetness, complementing the flavors from the fresh shrimps and the ham.
Hailing from Spain, meanwhile, is the Paella Rice topped with Chorizo and Bacalao Croquettes (P595). This one is certainly a treat, with a golden Bacalao croquette sitting atop rice, already infused with bell peppers, tomatoes, and shrimps. The Bacalao croquettes are fried perfectly, a crunchy exterior and a nice moist texture inside. The color of the rice-a tad too yellow, if you ask us-suggested a lot of saffron.
But our favorite has to be the Crab Roe and Garlic Fried Rice topped with Stuffed Crab and Kang Kong Leaves (P595), inspired by the Philippines. Garlic rice is a breakfast favorite that goes well with tocino, longgonisa or beef tapa. While you won’t see any bits of garlic, you’ll know it’s there; it’s so well-infused that, just a spoonful is enough to experience the superb richness. We loved how the crab roe comes off the shell with just the gentlest of coaxing. It is served with vinegar on the side, so take their suggestion and drizzle some on your rice. You’ll be thankful you did it.
If you can’t get enough of the rice toppings, there are other flavors like the Steamed Jasmine Rice Topped with "Dong Po" from China (p555), Biryani Rice Topped with Chicken from India (p545) and Creamy Mushroom Risotto Topped with Osso Bucco Chunks, Parmesan and Gremolata (p595) from Italy. Aside from the special menus, don’t miss out on Oakroom’s variety of food that they serve with elegance and explicit taste.
To end this delectable course, a pleasant Berries Sherbet with Lime Macaroon will ease out the lingering strong flavors The rich maroon sherbet is partnered with a sweet lime macaroon that melts inside your mouth. The combination is pure balance.
World of Rice Toppings will be available until May 31, served during lunch (12p.m. to 3p.m.) and dinner (6p.m. to 10p.m.) at Oakroom.
