Healthy dishes made from natural ingredients now available at the hotel's dining outlets
(SPOT.ph) The Peninsula Manila brings the benefits of organic eating to cityfolk with 360⁰ Wellness, a collaboration with The Farm at San Benito. The menu comprises dishes created by the Peninsula's chefs Samuel Linder and Avanish Kumar Jain, together with chefs from the wellness resort, and features organic vegetables, herbs, and greens. "My mother was a believer in ayurvedic medicine's healing properties. As a child I remember her telling me that ayurvedic food must be appetizing, flavorful and aromatic...cleansing of toxins and revitalizing the body are its main objectives," says Chef Avanish.

Among the standouts: the Cauliflower Samosa with Banana Dip, which offers up a serving of the vitamin-packed vegetable with a subtle kick from curry, a Eggplant Ratatouille Involtini, which combines a bell pepper fregola with wild rocket leaves and a tomato fondue, and the Lentil Wrap, a surprising medley of mildly earthy flavor from the lentils, freshness from a cucumber raita, and a sweet tanginess from chutney. The dishes are available at Old Manila, Spices, The Lobby, and via room service, and new ones are scheduled to be added to the menu each month.
