(SPOT.ph) The closing of Gourmandise Patisserie, the Parisian-inspired dessert haven in Serendra, left eclair fans heartbroken, but with Shine Bakery & Café, chef-couple and owners Rob and Sunshine Pengson pick up where they left off to show that they have more in their bag of tricks-this, on top of other established projects like The Goose Station and Olive Tree Kitchen and Bar. The new hangout at SM Aura in Bonifacio Global City offers not only their unparalleled baked goods but also savory dishes crafted with undeniable ingenuity and flair.

 

The whimsical decor is a crowd-pleaser.

 

Shine Bakery & Café is tucked among a section of shops catering to kids and tweens; the location has a hand in the bakery-café's whimsical decor, as if it’s a magical discovery that popped out of nowhere. Immediately upon entry, guests are greeted by candy cane-inspired door handles, assorted trinkets and books encased in glass boxes, and glimpses of colorful and beautifully plated dishes. The furniture is primarily done in nudes and pastels mixed with the occasional pop of color, complementing Shine's strong suit: their vibrant display of delectable pastries and cakes.

 

Shine borrows elements from the upscale The Goose Station-out-of-the-ordinary interpretations and fancy cooking techniques-but for Chef Rob, this new place is a "playful, more casual" take. The menu is a comprehensive lineup of vegetarian, organic, and have-it-your-way dishes to keep every type of palate satisfied.

 

Fat, juicy fries are the best kind.

 

The starter section has delectable sounding options like Cornmeal Crab Cakes (P350), Stuffed Medjool Dates (P188), and Fish & Fries (P388), but when stuck in a decision-making bind, the Parmesan Nori Fries (P250) are a good jumping-off point to a meal at Shine. Umami kicks up the flavor of the usual homemade fries, giving these addicting strips of potato a more diverse and unique flavor profile. They also have Caesar Salad (P364) and Apple & Arugula Salad (P390), which diners may customize with add-ons like Stuffed Medjool Dates, Malagos Farm Goat Cheese, Chicken Schnitzel, Jamon Serrano Chips, Crab Fritters, and Grilled Steak.

 

Scallop & Chorizo Pasta

 

The servers recommend the Scallop & Chorizo Pasta (P498) and it’s advice worth taking. Perfectly seasoned and cooked scallops are tossed with chorizo bits on a bed of creamy pasta. The twist is the unlikely mix of XO and Parmegiano Padano sauces. Other pasta choices include Roasted Garlic & Tomato (P298), Pancetta, Garlic & Cherry Tomato (P450), and Smoked Salmon Alfredo (P390).

The Fondue Burger is a mouthwatering mess.

 

Only Angus beef patties are allowed in Shine's burgers, which are all served with a fresh salad and a small serving of homemade potato chips and aioli. Their Fondue Burger (P388), in particular, is an instant crowd favorite. The burger is melt-in-your-mouth, owing to the generous helping of cheddar Mornay fondue atop brioche, pickled mustard greens, and mushrooms.

 

Chicken Schnitzel

 

For the main course, the Chicken Schnitzel (P425), herb-crusted chicken served with capers and chopped egg remoulade and homemade fries, is a must-try. The crumb coat is light and may be taken with either an aioli or honey sauce-the latter will be a sure-hit with kids. For those with fatter wallets, dare to sample the Foie Gras Salpicao Silog (P888) and Duck & Fwaffle (P1,250).

 

A delightful Deconstructed Chocolate Cake


No matter how delectable Shine’s savory options are, don’t forget your motives. Remember that you are here for dessert. And, with Chef Sunshine at the helm, you already know that it’s going to be the highlight of your meal. There are the eclairs, which Chef Sunshine has perfected long ago. Then there are new delights like the Deconstructed Chocolate Cake (P290) which has a bit of everything: chocolate caramel mousse, chocolate cake, chocolate discs, honeycomb toffee, vanilla ice cream, meringue, dollops of rich caramel and berry. You can taste everything in one perfect and sinful bite.

 

Now we understand why Gourmandise had to close. Like every heartbreak, it was making way for something better.
