Mandarin Oriental Manila plays host to another acclaimed chef for a weeklong promotion featuring contemporary French gastronomy.

( It wasn't so long ago when Mandarin Oriental Manila brought Michelin-starred Chef Nicolas Isnard to The Tivoli. This time, another culinary master will be cooking up a feast at the hotel's signature restaurant. French Michelin-starred Chef Richard Toix, in collaboration with The Tivoli Executive Chef Rene Ottlik and Executive Sous Chef Remi Vercelli, will serve scrumptious specialties combining international flavors and local produce.

Chef Richard brings with him over 20 years of experience, plus a style that merges traditional and modern cooking techniques. A native of Perpignan in France, the celebrated chef started his culinary education in a Lycée Hotelier. He then trained in London with the Roux Brothers, a three-Michelin-star restaurant, before working in various eateries, then putting up his own back in France. Chef Richard is known for the fine dining destination Passions et Gourmandises in Saint-Benoit, which earned its first Michelin star in 2008, less than a year after opening.

The renowned chef values sustainability. "Chef Richard never cooks anything out of season. He works a lot with local suppliers. He can go somewhere and adapt his style to the availability of the products," says Chef Remi. Upon his arrival, Chef Richard is expected to check out local markets in search of the best ingredients for his promotional menus.



Potato-black truffle croustillant



Among the dishes that will be on offer are the potato-black truffle croustillant with brown butter, lamb loin in seaweed crust with lemon pâte and garnish, and slow-cooked chicken breast with vegetable pot au feu and morilles jus. In his fish selections, Chef Richard will highlight the local catch: lapu-lapu fillet, crab meat-avocado cannelloni, and shellfish vinaigrette; and mahi mahi fillet, coconut, and Black Pearl curry.

Chef Richard's culinary creations will be showcased via a signature three-course Business Lunch menu for P1,950 and the six-course Degustation Dinner menu for P3,400 (an additional P1,800 with wine pairing). A selection of dishes will also be featured in the restaurant's daily à la carte menu.
