(SPOT.ph) As soon as the clock strikes 10 p.m., something happens. Cocktail tables are set up, upbeat music starts to play, and the bar turns into a dizzying assemblage of single malt drinks. Black Sheep, the fine-dining, open-kitchen restaurant, becomes Black Sheep the bar, a relaxed yet playful after-office affair.
Bar by Black Sheep offers over 120 single malt brands (P250 to P2,600) in premium labels like Caol Ila, Cardhu, Cragganmore, Glenkinchie, and Oban 14, to name a few. Their wine selection (P190 to P370), on the other hand, includes Spanish, Italian, French, Australian, and vintage available for wine connoisseurs. Artisan cocktails (P290 to P450) are made from premium-based liquor and fruits. The Goldfinger, inspired by the 1964 James Bond film, is a playful mix of Johnnie Gold, orange and grapefruit juice, Cointreau, and sweet sherry.
The Bar Bites (P225 to P580) are ideal accompaniments to the booze. The Smoked Pork with microgreens is especially savory, with sesame dressing to clothe it in distinct nuttiness. The menu changes every day, depending on the fresh ingredients in the kitchen. While you can develop a favorite cocktail, it might be difficult to get attached to one particular kind of chow.
Black Sheep also has a five-course Ketel One degustation menu (P1,100) that merges sweet and savory spirits together. Each vodka-based drink was concocted to represent the different stages of dating: Pick Up Line (peach schnapps, Blue Curacao, and apple juice; P260), Small Talk (chardonnay, lemon juice, and grapes; P300), Truth or Dare (Sprite, blueberry, strawberry, and ginger; P320), Take Me Home Tonight (rose and Sprite; P340), and No Regrets (sweet Sherry, coffee liqueur, Bailey’s original, and orange juice; P320).
