(SPOT.ph) The sandwiches from The Pantry aren't at all over the top. No luxurious truffles or caviar make up a filling that doesn't spill out in that mouthwatering manner from the sides. They’re not exceptionally large, either.
"I’m a sandwich lover and I felt that there was/is a lack of good sandwich places in Manila," says owner Monica Savellano, adding that most sandwich shops were either too ordinary, too expensive, or too lackluster. "Though there are some places that serve good sandwiches, I still wasn’t content. I wanted more out of a sandwich." What you get when you open the cardboard box is a neat roll of ciabatta in a size perfect for holding and eating-exactly how you should take your sandwich. In between is filling that's plenty but proportionate, with flavors confident enough to stand out without unnecessary excessiveness in quantity.
The La Roja (P190), for example, is a package of whole shrimps cooked gambas style. Savellano doesn't waste sandwich space with extenders or even other components. Instead, she just generously spices the shrimps with garlic. Consider the popular tapas tucked between crisp bread. If you want a deeper sense of flavor, request a sprinkle of chili flakes for an extra P5.
Bistek Tagalog finds its sandwich counterpart in the Holy Cow (P165) where caramelized onions mingle with strips of sweet slow-roasted beef. Bagna cauda, an anchovy-lemon butter sauce, elevates the simplicity of the Early Bird (P135): slices of hard-boiled egg lathered with aioli and greens are perked up by its tangy-saltiness.
Asian flavors are represented in the Asian Chicken (P155). Cilantro and cucumber brighten the brisk flavors of garlic hoisin. The chicken is tender, but with enough bite for you to easily course through the entire bread. The Pantry also has Veggie Good (P130), made with aioli and grilled vegetables.
The Pantry's small but wide-ranging set of flavors can satisfy anyone's taste, but perhaps Savellano's greatest gift to the sandwich world comes in the form of The Porky (P165). Chunks of lechon kawali are spread across the roll, a happy mix of the crunchy and soft parts of a pig’s belly. Every bite is rewarded with surprise crackling. Arugula and lemon aioli balance out the heaviness to create a truly sensational ensemble. The only thing you'll regret is not having more.
