(SPOT.ph) Dieting is not as quick as cutting down food intake or counting calories, then hoping you’ll lose a few pounds and inches when you reach a certain point of starvation. A proper diet is, or should be a careful and intelligent plan that considers physique, lifestyle, and, of course, exercise. If it were as simple as skipping meals, there wouldn’t be experts for it. MDF is Mitch Miranda and her fiance, Dean Fabella. Mitch is a registered nutritionist. She used to work in Fitness First, designing weekly menu plans for members. One of them suggested that she should make the food instead of just planning them. The idea snowballed to become her own business. Her roster of clients now includes radio host DJ Tony Toni, actor JC De Vera, and singer Kai Honasan who lost 100 pounds in one year.

Mitch personally meets with her clients before anything else. This allows her to study their physical condition and learn about their medical history. "I’m trained to assess since I also worked in the dietary department in Medical City," she says. Meal plans are organized according to their needs: calories are counted and special provisions are made for the customers’ preferences. Some, according to her, don’t eat certain types of food. Others are strict vegetarians or subscribe to gluten- or dairy-free eating.
To have a more wholesome view on health, MDF also has a weight gain program. "I have an eleven-year-old who was under that," relates Mitch. "He used to hate vegetables, but he’s grown to like them. I have another client who used to have high blood sugar, but just after a week, didn't need to inject insulin anymore."
Customization and weekly tracking of her clients’ progress keeps her busy. Dean, for his part, does a lot of the cooking. The financial-analyst-turned-cook attends classes on international cuisine and uses this education to pepper their meals in the healthiest way possible. Instead of salt, herbs and spices are used for flavor.

The dishes aren’t as rich as adobo or kare-kare and portions are admittedly smaller, but deprivation isn’t something to worry about. A daily menu looks something like this: Tuna-Vegeroni Pasta Casserole or the Sweet Potato Cake with Baked Vegetable Frittata for breakfast; Cilantro-Crusted Fish or Chicken with Cauliflower Stir-fry for lunch; and Homemade Chicken Burger or Seared Salmon with Quinoa for dinner. Snacks like banana cake, chewy bars, or organic detox juices from Pure Jus are available in between meals. In between meals are snacks that consist of either a slice of yummy banana cake, chewy bars or organic detox juices from Pure Jus.
