Crispy, flaky, buttery-these are only three from the multitude of positive adjectives that can describe the perfect kouign amann. A traditional French pastry, the kouign amann is a round dough made up of buttery layers and caramelized sugar. In Manila, Chef Cyrille Soenen does it best.
