(SPOT.ph) Holidays are for spending time with loved ones and gorging on a seemingly endless supply of good food. So to fulfill diners’ gustatory requirements for the season, M Cafe and Kabila have put together their Christmas Salo-Salo.

 

Old M Cafe and Kabila favorites and a few new dishes have been put together by Chef Kalel Chan, combing Filipino and modern Asian flavors in four festive sets.

 

Jamon & Queso Plate

 

Ensaladang Kabila

 

Crispy Fried Kangkong

 

The Jamon & Queso Plate gets the feast started with pineapple-glazed ham, queso de bola, mini pan de sal, sugar-coated cashew nuts, and calamansi honey. The Ensaladang Kabila comes highly recommended for its refreshing and colorful mix of ripe and green mangoes, pomelo, turnips, tomato salsa, salted egg, and pili nuts drizzled with calamansi dressing and served with a side of M Bagoong. The Crispy Fried Kangkong also does the job of rousing your appetite, mainly because of its addicting smoked milkfish dip.

 

Fresh Lumpia

 

Halaan Soup

 

The Fresh Lumpia, with its strong nutty flavor, is best enjoyed with the muscovado sauce to achieve balance. In the comforting bowl of Halaan Soup, relaxing aroma, gingery seafood broth, and just the right tinge of spiciness merge.

 

Grilled Chicken Inasal

 

Lengua Estofado

 

Kabila Porchetta

 

M Cafe and Kabila’s Grilled Chicken Inasal stays true to how inasal should be-smoky, tender, and juicy, and served with papaya atchara and, of course, chicken oil. The Lengua Estofado exhibits superb tenderness with its laboriously cooked ox tongue in tomato sauce, olives, mushrooms, and cream. And what is a Christmas spread without the pig? The Kabila Porchetta satisfies this need with its perfectly spiced pork belly roll wrapped in indulgent, crispy skin.

 

Gindara Mayonessa

 

Among the new offerings exclusive for the holiday season is Gindara Mayonessa, baked Gindara topped with mayonnaise, chopped eggs, capsicums, relish, and onions. There’s also the Chicken Galantina, a festive serving of roasted chicken stuffed with pork, raisins, cranberries, cheddar, and capsicums.

 

Ube Tres Leches

 

Brazo de Calamansi

 

Salted Egg and Queso Bibingka

 

For dessert, aside from the sweet and tarty Brazo De Calamansi and the coconut-topped Ube Tres Leches, M Cafe and Kabila offer the new Salted Egg and Queso Bibingka, a staple in every Filipino Christmas.

 

Price per person for the set of six (two options) is at P550++, while price per person for the set of 10 (two options) is at P650++.
