Prepare: A nationwide food festival is coming this April
Flavors of the Philippines is ready for Madrid Fusion Manila
(SPOT.ph) A number of gastronomic events is underway this April. The month-long Flavors of the Philippines, organized by the Department of Tourism and happening simultaneously in Luzon, Visayas, and Mindanao, will serve as a prelude to Madrid Fusion Manila.
Restaurants like CIBO, Casa Marcos, XO 46 Philippines, Tapeo, Lusso, Aracama Filipino Cuisine, Cirkulo, CYMA, Grace Park, Alta Restaurant, Alba, and Bistro Eleven, as well as members of the Hotel and Restaurant Association of the Philippines will be offering special Spanish menus for a limited period. SM Supermalls and Ayala Malls will also integrate a bit of Spanish flair in their food courts.
On April 11, a Tapas Night at Makati’s Green Sun Hotel will showcase a vast array of small plates cooked by Spanish chefs based in the Philippines. Guests can sample tapas by chefs Chele Gonzalez (VASK), Juan Carlos de Terry (Terry’s Selection), Pepe Lopez (Rambla), Carlos Garcia (The Black Pig), Nicolas Diaz (Barcino), and Pablo Lopez (Donosti).
Spanish-themed food trucks, dubbed Cocinas Viajeras, will also be set up in Ayala Malls. The first ones will be on April 11 at Bonifacio Global City (Chefs JP Anglo, Rob Pengson, and Noel dela Rama) and Trinoma, Quezon City (Chef Myrna Segismundo). The truck will make its way to Glorietta, Makati City on April 18 (Chefs Chele Gonzalez and Gaita Fores) and then Ayala Centrio Mall, Cagayan de Oro City on April 24 (Chef Sau Del Rosario).
The Festival de la Paella Gigante III will be held at Greenbelt 5, Makati City on April 18. Here, Chefs Mikel Arrie, J Gamboa, Fernando Aracama, Carlo Miguel, Jerome Valencia, Gilbert Pangilinan, and Sito Senn will cook a nine-foot wide Paella Valenciana the traditional way-over charcoal and firewood.

Madrid Fusion is an annual congress of chefs and members of the culinary industry for the sharing of ideas and techniques. Though historically conducted in the Spanish capital, it will be held in Manila this year to celebrate the two countries’ shared past.
