(SPOT.ph) Finding your favorite bar or after-office hangout is a tricky task. It needs to have just the right ambiance, bangin' cocktails, and, preferably, killer eats to sate our need for destressing after a hard day's toil. One such spot we recently discovered is The Bevvy along Chino Roces Avenue in Makati City. This under-the-radar hidden wine bar has all the makings of being the next hotspot in the Metro. So much so that it's taking us a bit of will power to share this sweet find on here.

From what used to be the showroom for wine and spirits distributor Don Revvy comes The Bevvy, a full-service casual resto-wine bar. Unlike most establishments with clear-glass storefronts roadside to tempt you with a preview of what's within, The Bevvy is in a not-so-obvious location with little to no indication of what it holds. Along an alley, which most would assume to be for deliveries of the establishments up front, with no flashy sign to alert you of this spot's presence, is a small sign to announce its existence. In a blink-and-you'll-miss-it moment, this is the only indication that you've reached a place quite rare in the city.
Opening the door feels like becoming privy to something few know. A step in, and the chic and modern industrial-looking interiors will clue you in to the brand's history and story behind the bar's name.
The interiors spend no time reminding you that you are here to drink. From walls lined with a vast selection of bottled wines and spirits to the far end of the dining area, where wine chillers are placed, there's no denying a stay here will leave you turnt.
Here's why this casual wine bar along Chino Roces Avenue should be on your radar:
The Bevvy serves diners more than just your average drinks. While they capitalize on the vast selection of spirits available at their disposal, the true magic comes from the curation and mixology of their resident drinks master Lenon Aguilar. For the uninitiated, Aguilar is more than your average mixologist. He is one of the Philippines' best and is known for making unconventional mixes; think drinks made with meteorite or ones called Tinapa Aviation Cocktail, Bulalo Old Fashioned Cocktail, and more.
Don't worry, his mixes for The Bevvy aren't as out of this world, though they certainly hold their own. For this watering hole's signature drinks, Aguilar takes some of the most common cocktails and gives them The Bevvy twist. Take, for example our favorite tipple on the menu, the A New Kind of Gimlet (P250), which takes the classic gin plus lime cocktail and makes it extra refreshing and the perfect summer drink by mixing in hints of lemongrass, cucumbers, and, for extra oomph, pink peppercorns.
Speaking with The Bevvy's owner, Jojo Vega, he tells SPOT.ph that The Bevvy hopes to be a place for everyone. Not too high brow for the young and working, nor too rowdy for the more mature drinkers. That being said, this sensibility is carried over to Aguilar's mixes, where there is a little something for everybody. Fruity drink-loving folk must-not miss the Life's a Peach (P250) cocktail nor the deceptively innocent-looking The Bevvy Club (P250).
But spending your time drinking at The Bevvy is only half of the experience. Going here to get black-out drunk is practically a disservice to yourself and the establishments. Unlike most bars where food is an afterthought, here, food is a partner. This comes courtesy of Chef Jayjay Sycip's incredible food menu.
When this spot was Don Revvy's showroom, Vega laments that most of their guests either had to make do with cold cuts platters or order from the outside. As more and more people drank at the showroom, it made the most sense to start serving food. But dining at The Bevvy isn't just about finger food and bar chow. You can actually get full and eat hearty, filling meals here.
Come in with an empty stomach and you won't be disappointed. Fill up on delectable, smoky, garlicky Spaghetti Gamberetti (P450) or a classic beefy ragu, a.k.a. Bolognese (P395).
If you're out celebrating and down to splurge, order their Pan Roasted Ribeye with cauliflower gratin and glazed carrots (P2,900). Trust us, the price tag may be on the higher end of the spectrum, but the portion sizes are out of this world.
If you're not really looking to fill up and just need something to nibble while you down your drinks, our must-not-miss fave has to be the Korean Rib Fingers (P625) and the Fish and Chips (P550).
A plate of Korean Rib Fingers will have you ordering more. Tender and sweet with a little bit of a kick, this finger food is great to eat on its own, with a side of rice or as bar chow accompanying any of The Bevvy's cocktails or spirits.
Hands down, the star of Sycip's menu has to be the Fish and Chips. Arguably the best helping of Fish and Chips we've had in a while, this large plate of lightly breaded fresh Cod with a side of housemade potato wedges is an absolute must-try. The fish is perfectly fried, keeping moist and succulent even after hours of us chatting and it sitting out on the table. With just the right amount of breading, the fish's delicate flavor shines without overwhelming the palate. Definitely a great partner for any of the drinks available on the menu.
Leave room for sweets, too, because The Bevvy also has Flour Pot Manila chef Rhea Sycip's Banana Sticky Pudding (P450) and Walnut Brownies a La Mode (P450) on deck for dessert. If it's a sweet ending on the cocktail front you are after, then an order or two of Chino By Night (P250), The Bevvy's coffee rum, coffee, coconut, cranberry, and lime tipple might be the one for you. With nutty, earthy, and slightly tart notes, this cocktail is the perfect way to end a night of drinking and dining at The Bevvy.
From more food and tipples to more community engagement, Vega teases the crowd to expect more as The Bevvy fully opens. Right now, its presence in Makati is made known mostly by word-of-mouth among patrons and loyal Don Revvy followers. We say get to the party early.
