What's Next for Savage BGC, From Chef Josh Boutwood

They're not going away entirely; here's the scoop on their new location.

(SPOT.ph) When Chef Josh Boutwood opened Savage in 2018, he wasn’t opening just any other restaurant—not that any of his restaurants are just any other restaurants, really, but we digress. He was also making a case for going back to simpler times and embracing the rustic, rugged, (dare we say) wild side of the kitchen. At the dining spot in Arya Residences, BGC, Boutwood advocated the pre-industrial way of things, doing away with the conventional use of gas and electricity and instead harnessing the power of fire to cook a spectrum of dishes—which range from pass-around small plates to meaty mains to plant-forward numbers and everything in between.

Now on their sixth year, the restaurant has closed its original location. But they’re by no means bidding us a final farewell, as they’ve got plans to reopen in a new spot, slated to open later this year of 2024.

Saying Goodbye

Boutwood and the Savage team held an exclusive Farewell Dinner for industry friends and members of the media on their final night last Sunday, June 30. Over plates of their fan favorites—which includes the likes of the Charred Romaine, Chilean Mussels, Orange Roughy with Grebiche, Smoked Pork & Beef Link, Ribeye, Zucchini Salad, and Kladdkaka dessert—Boutwood recounts Savage’s early days and thanks those who’ve dined with them over the years.

“I feel like when we started Savage, well, we pioneered this whole pre-industrial movement here in the Philippines, says Boutwood in an exchange with SPOT.ph. “And since then, we've seen others following suit, which is great. It's great for the cuisine or the type of cooking.”

The chef has also taken to Instagram to do a joint public post with the Savage account and his own. "This journey has been incredible, filled with hard work, creativity, and, most importantly, the support and love from all of you... As we close this chapter, know that this is not the end but a new beginning. The spirit of Savage lives on, and we are excited to announce that the next chapter of Savage will be opening soon. It will be a continuation of our journey, with new ideas, new flavors, and the same dedication to excellence. Thank you all for being part of this incredible journey and Tonight, we eat like a savage, drink like a Viking, and be merry knowing the future is bright."

What's Next for Savage and Chef Josh Boutwood

The restaurant thankfully isn't moving too far away; you can expect to find them next at East Gallery Place, also located in BGC, slated to open sometime later in the year. “Where the Jordan store is [in East Gallery Place]—I'm on the corner right next to Jordan store,” Boutwood hints. “There's a line of stores that are going to be their restaurants and I'm happy to say that I'm with some very nice chefs as neighbors. It's going to be a very chef-driven line.”

Chef Josh considers Savage’s relocation the “most exciting [project] that we've got going on at the moment.” Though he emphasizes preserving the restaurant’s DNA and “keeping the original Savage intact,” he shares that there would be an opportunity to “build up on it, and improve it in a way where we can create additional dishes that are more Savage-centric and interesting.” The visuals, too, will be getting a significant refresh as they’ll also be putting in “a lot of emphasis on the design.” “The design kind of dictates the whole feeling as well,” he explains.

“It's the most, dare I say now, since we've evolved so much, it's the most gruesome of them all. It's my little bastard, I call it, of my group. Like the Jon Snow of the restaurants,” says Boutwood. “And I'm excited to see where we can bring Savage in its new location.”

The chef also hints at a soon-to-open spot that’s “going to be slightly up north [of Makati] a little bit.” The name and exact location has yet to be announced (though a boardup for the place is already up!); we’ll let you in on that very soon.
