Tucked away along Wilson street in San Juan, Sa’min Bar and Community Space is a relative newcomer to Metro Manila’s growing beverage scene. Here, nostalgia isn’t just the theme—it’s the main ingredient. Picture the ice scramble: a beloved Filipino treat made with shaved ice, banana extract, and sugary toppings. At Sa’min, it’s all grown up—whiskey adds a spirited kick to this pale pink, street-side classic. Or take the X.O. candy, a sari-sari store staple, whose distinct coffee-like bitterness is reimagined as a mezcal-based cocktail that’s equal parts playful and punchy. For founder Jenell San Antonio, everything at Sa’min—from the menu to the music—is crafted to spark recognition and curiosity, blending the familiar with the unexpected.

Once inside, the space immediately exudes a sense of ease and comfort, creating an intimate atmosphere that’s unique to cocktail bars. While undeniably modern in design, the thoughtful integration of Filipino motifs adds a layer of warmth and sentiment, seamlessly fusing tradition with contemporary flair. Solihiya—a traditional rattan weave—adorns the walls, while concrete window blocks reminiscent of typical Filipino homes frame the DJ booth on the side. A palette of deep, muted blues punctuated by vibrant greens softens the space’s overall impression, striking a balance between sleek sophistication and cozy charm. Flexible seating arrangements, ranging from bar stools to lounge chairs, allow guests to tailor their experience to the night’s mood.

Sa’min marks Jenell’s first venture into the local beverage industry—a step driven by a simple yet profoundly personal desire: to carve out a space to call her own. Jenell (or Jen, as most people know her) is a firm believer in the power of good timing. After a decade in the corporate world, she felt it was finally time to turn the page and begin a new chapter in her career. Looking back, she fondly recalls countless late-night conversations shared with good friends over great drinks. “One day, I want my own place—my own bar,” she would say. “And I guess that ‘one day’ finally came.” Emboldened by her ambition, Jen set to work. A year of developing the concept from the ground up culminated in Sa’min opening its doors to the public in July 2024.

Jen’s vision for the cocktail bar was to create a “third place”—a concept first introduced by sociologist Ray Oldenburg in 1989, describing a social environment beyond the two primary spaces where people typically spend most of their time: home (the first place) and work (the second place). In essence, the third place serves as a neutral, casual gathering spot where connection, conversation, and a sense of belonging can flourish. Be it in a park or café, it’s an open setting where meaningful interactions can unfold, free from the pressures of home or work. “I want Sa’min to be the third place,” shares Jen. “It’s not your house, not your office, but your go-to outside of all that.”

The name “Sa’min” is a layered expression of Jen’s intention to both claim ownership and foster community. The apostrophe, a deliberate stylistic choice, symbolizes the union of “Sa” (you) and “min” (us), highlighting the intrinsic relationship that exists between individuals and the collective. Drawing from her lived experience within the LGBTQIA+ community, Jen champions acceptance and inclusion, aiming to ensure her work reflects these principles. At the same time, the apostrophe also resembles a location pin, subtly referencing her broader vision of positioning the bar as a destination for cocktail enthusiasts.

Though primarily a bar, Sa’min shifts gears during the day, operating as a “community space.” It’s not quite a café, but the transformation is clear: the moody, intimate ambience of the evening gives way to a light-filled setting that encourages focus and productivity. It’s a set-up that naturally lends itself to remote work—welcoming laptops, long hours, and a steady flow of ideas. Occasionally, Sa’min hosts daytime events centered on wellness and creativity. In the past, they held a journaling workshop focused on introducing mindfulness habits. In its own way, Sa’min is merging work and leisure, bringing its third-place vision to life.

Stirring Distinctly Filipino Elements into Bespoke Cocktails

The beverage program at Sa’min blends casual ease with thoughtful precision, infusing each cocktail with a clear attention to detail, ultimately resulting in a drink that is both straightforward and nuanced. True to this approach, Jen envisions Sa’min as a “gateway to the cocktail scene.” While collaborating with her mixologist during the R&D phase, the brief was definitive: to create drinks that feel approachable yet introduce a hint of complexity. In co-developing the menu, they sought to cater to a variety of flavor profiles, ranging from sweet to sour and light to rich. A quick glance reveals a strong focus on reinterpreting Filipino culinary elements. For Jen, this was a deliberate move—drawing inspiration from household ingredients and street food culture to evoke a feeling of familiarity.

At Sa’min, it’s no surprise that their signature cocktails take center stage. Nostalgia—and a dash of wit—bring depth and character to each concoction. The Scrambol (P480) is an easy one to start with—creamy, boozy, and decidedly indulgent. This whiskey-based cocktail is infused with chocolate bitters and strawberry syrup, then topped with a pinch of sprinkles, mimicking the ice scramble you loved as a child. For those craving something more spirit-forward, the XO (P500) might be the perfect choice. A playful nod to another uniquely Filipino reference—a coffee-flavored candy commonly sold on the streets or in neighborhood sari-sari stores—this drink is a carefully crafted blend of mezcal, coffee liqueur, Peychaud’s bitters, and butterscotch syrup, finished with a touch of coffee jelly for added texture.

Beyond evoking memories of shared experiences, Sa’min also takes pride in using locally sourced produce. Tama Rin (P500) is a fitting example of clever wordplay. First, there’s the obvious—tamarind, the cocktail’s defining ingredient. But then, there’s also the literal translation of the word: “correct” or “hit.” And they’re spot on, as this beverage certainly packs a punch. A gin-based concoction infused with coconut liqueur, lime, and tamarind, this one’s ideal for those who enjoy a bold, sour flavor profile. In the same spirit, the S.U.H.A (P500) kicks in after a few sips. True to its name—an abbreviation for “Sipping Unassumingly Healthy Alcohol”—it boasts a light, refreshing appearance. Here, suha (or pomelo in Filipino) shines as the star component. The combination of lambanog, pomelo cordial, tonic water, and desiccated coconut salt blend to create a lively, harmonious mix. With summer in full swing, this one is a no-brainer.

Rounding out Sa’min’s lineup of signature cocktails is Tinola ni Leticia (P480)—arguably their most inventive creation and the closest to Jen’s heart. “Leticia is my mom, and tinola is my favorite dish of hers,” explains Jen. With its distinctly savory profile, this cocktail is made for the adventurous. It may not be the tinola you grew up with, but it’s just as soothing. “I want it to feel like the warmth of home-cooked meals on Sundays,” says Jen, “but with a twist, of course!” The result is an intriguing concoction that borrows the comforting notes of the classic soup, blending white rum, chicken broth, white egg, citrus, lemon, and ginger into a surprisingly bright sip.

Having a good grasp of the fundamentals is key when it comes to cocktails, as most bargoers tend to judge based on these timeless classics. At Sa’min, you’ll find staples like the Martini (P450), Negroni (P450), and Old Fashioned (P450)—each skillfully crafted to capture the essence of these iconic drinks. On the other end of the spectrum, the Bramble (P420), Whiskey Sour (P420), and Amaretto Sour (P420) offer a lighter, more refreshing contrast. As with any good bar, the team at Sa’min is always happy to craft a bespoke cocktail—just let the bartender know what you’re in the mood for.

Partnering for Flavor, a Curated Menu of Savory Bites

Sa’min offers a curated selection of savory small plates, delivered hot and fresh from neighboring establishments Flossom and Oista. With limited space, setting up a full kitchen posed a challenge for Jen and her team. However, what could have been a constraint became an opportunity. True to her vision of fostering community, Jen saw the potential in forming partnerships with nearby restaurants. The result is a well-considered menu with dishes designed to complement the cocktails.

For light bites, popular choices include Patatas Bravas, Onion Rings, and Bacon Crisps. For something more substantial, the Crispy Glazed Eggplant or Tapa Crostini with Brie are sure to satisfy that salty-sweet craving. Each plate is priced at P330, regardless of the order, while a group-friendly option offers five plates for P1,300.

Throwing It Back with a Soulful Soundtrack

No great night is complete without the right soundtrack—and at Sa’min, the music sets the tone. A longtime fan of R&B and hip-hop, Jen channels her love for the genre through the bar’s nightly playlists, often throwing it back to the early 2000s and fully leaning into that nostalgic feel—a thread that subtly runs through the entire space. Come Friday, the energy picks up with “BB Biyernes,” a recurring event that spotlights female DJs and their soulful spins on R&B, hip-hop, and funk. The name is a reference to binibini, the Filipino word for “miss.”

For Jen, the decision to center women is personal. “We’re an all-female team,” she shares, referring to everyone from the manager to the bartender—still something of a rarity in an industry that remains largely male-dominated. It’s why she’s driven to uplift and amplify female talent whenever and wherever she can.

Looking Ahead, Sa’min’s Path Forward in the San Juan Scene

As their one-year mark approaches, Jen looks ahead with optimism. Exciting plans are on the horizon, fueling the team’s collective desire to further cement their presence in the San Juan beverage scene. On May 1, Sa’min will host its first-ever bar takeover—a one-night-only event featuring Toru Ariyoshi of Bee’s Knees in Kyoto. The acclaimed speakeasy has been a mainstay on Asia 50 Best Bars list from 2020 to 2023 and secured a spot in the Top 100 in 2024.

At this point in their journey, Jen feels that Sa’min’s third-place ethos is coming into fuller expression—resonating more deeply with the community around them. “When people come here for the first time,” she says, “I want it to feel as if they’ve been here before.” While the creativity behind their cocktails certainly leaves an impression, at Sa’min, what lingers long after the last sip is something deeper: a sense of warmth, of ease—like coming home to a place you didn’t know you missed.
