(SPOT.ph) Inspired by Varekai, Cirque Du Soleil's mind-blowing show that's in town for a month, the Champagne Room's Chef Christine Zarandin has created an equally astonishing degustation menu that's not to be missed. The menu, which is available from June 22 to July 24, features six exquisitely prepared plates with unforgettable flavors.

The menu starts off with a foie gras-stuffed meringue cleverly presented on a stick, which, as advised by Chef Zarandin, "should be eaten in one bite." That one bite releases unusual but pleasant flavors and textures balanced off by a side of butter, sugar, and cider-stewed apples. Next, is the soup, a lovely light and herby broth infused with bits of lemon pulp poured over a chicken and egg concoction right before eating. What follows next is a deep smoked single shrimp skewered with a perfectly crisp bacon strip covered in saffron-flavored foam. To cleanse your palette and prepare you for the main course, a gazpacho sorbet accompanied by fresh basil leaves, edible petals, and a balsamic reduction is playfully presented ala Bobeche, a popular French clown.

 

The highlight of the menu is the main offering, a generous serving of steak and lobster. Ingeniously served with a tent-shaped cloche, the mere sight and aroma of this dish can make you clap your hands in sheer delight. The succulent lobster tail paired with the melt-in-your-mouth tenderloin is one of those dishes you wish would never end-the parmesan potato gratin that comes with it, is also a winner. Then, of course, there's dessert, a colorful and creative plate that's got chocolate ganache, caramel popcorn, cotton candy, and raspberry ice cream (phew!).



Just like the world-renowned Cirque Du Soleil's magical Varekai, expect to be wowed by this wonderful degustation menu that will give you an eating experience unlike no other, fun and flavor-packed. The impeccable service and available wine-pairing suggestions by the sommelier add to the overall superb factor.
