(SPOT.ph) One of the best remedies for a cold is a steaming bowl of pancit molo. Not only does the steam gently rising from its broth help unclog a stuffy nose, the nutritious soup and its tasty dumplings make the ideal filling meal when you don't have much of an appetite.
Obviously adapted from the Chinese wonton soup, pancit molo was supposedly invented in the port town of Molo, Iloilo, which is why the delicacy is often a bestseller in restaurants specializing in Ilonggo cuisine. The best pancit molo, according to a Negrense foodie friend, has a garlic flavored broth with generously-filled dumplings that should include shrimps. After reviewing 17 versions of this soup specialty, we added a few other criteria of our own: a good pancit molo ought to a have broth that's not too oily; the dumpling should be firm to the bite and flavorful; the wrapper should be strong enough to hold the filling without breaking, plus it should also be thin and silky and not pasty in texture.
