One Day Only: Have tacos a la Bruce Ricketts

(SPOT.ph) Culinary prodigy Bruce Ricketts is going back to his first love—Mexican food. His creations at Sensei Sushi a few years back may have gotten him on everyone's radar, but he's returning to his roots with tacos and tostadas.
La Chinesca En Mecha Uma is a one-day only Mexican affair on June 25, 4 p.m. onwards. Nope, reservations aren't required. Chef Bruce is inviting drop-in guests to sit back and enjoy a taco or three. If you're posting, don't forget that it's #lachinesca and @lachinesca.
The menu isn't final yet, but we know that there will be ceviche (P280); tostadas with spanish mackerel, nuoc cham, cucumber, radish, and avocado; arroz con pollo (P320) or chicken with a beer broth, peppers, vegetables, and salsa fresca (trust Chef Bruce to improve on chicken and rice); and aguachile (P290), a ceviche with salmon, jicama, spicy lime water, corn and pineapple pico, and puffed rice.
His range of tacos goes from your familiar snapper (P135) and lengua (P130) to absolutely incredible things like a slow-cooked Lamb Barbacoa (P140); Camaron con Queso (P150) or shrimp in chile, sofrito, chipotle, caramelized cheese, and avocado; Carnitas (P110) using pig head and belly confit; and Buche (P100) with stewed and griddled tripe. Get a three-taco combo for only P350.
