Arroz Gratinado Longaniza
(SPOT.ph) Spanish comfort food restaurant ArroZeria has introduced new menu items to please the paella-loving Filipinos. Chefs Jose Luis "Chele" Gonzalez, Ivan Saiz, and Keith Fresnido have taken over the kitchen to bring new specialty paellas and tapas to the table.
Surf and turf
Among them Arroz Gratinado Longaniza (P600) with longganisa, broccoli, and aiolo gratin; Cerdo Adobado (starts at P790) with marinated pork with porcini mushrooms, Del Senorito (starts at P790) with boneless chicken and peeled seafood; and Fideua or thin noodles in either Callos- (pork, tripe, and garbanzos; starts at P500) or Negra-style (black ink squid and octopus; starts at P590).
Diners can choose between the Spanish-style paella (al dente and thin), or the soft, wet kind that Filipinos prefer. Chef Chele shares, "We want to still be authentic, but we also want to reach the Filipino palate. We want to match the Filipino palate."

Tapas like the Salpicon de Pulpo (P370) or octopus marinated in capsicum and onion vinaigrette, Pimiento Rellenos (P295) or piquillo peppers stuffed with braised oxtail, Lengua Frita (P380) or deep-fried Angus beef tongue coated in béchamel sauce and breadcrumbs, and Gambas con Garbadina Negra (P395) or squid ink-battered shrimps are now also available in ArroZeria's updated menu.
