(SPOT.ph) While the rest of the city has been inundated with salad-heavy hotspots and vegetarian cuisine, there has been a considerable dearth in the hearty, hefty world of meat. Luckily, protein fiends don’t have to look too far these days for a fix—recently opened Spice and Cleaver delivers quirky, one-of-a-kind handcrafted sausages, fully loaded pizzas, substantial pastas, and tons of flavor.

“The concept started when we got Miguel Gianan as our executive chef at Brothers Burger,” recounts DJ Jose, one of the brothers behind the long-standing burger joint and part owner of Spice and Cleaver. “His resume read that his passion was sausage-making, and the idea of handcrafted sausages took off from there.” Chef Miguel’s experience with sausage came from years working with and learning under a German butcher, the late Michael Beck of Mickey’s Delicatessen.

Pizza flavors and sauerkraut

 

Spice and Cleaver’s artisanal sausages (P280/one-piece, P480/two-piece) have zero extenders, use non-synthetic casing, and are made of pure meat. They’re also cleverly creative, playing on variations like Pizza Sausage with sun-dried tomato and cheese; a must-try Mexican with cilantro and sun-dried tomato; Thai-inspired Mamasan; popular Lamb Sausage with olive and feta; and The Mask, which offers pulutan in a sausage (the sisig taste is unmistakable, plus it’s served with rice). Sausage servings come with hefty sides as well—virgin mashed potatoes (with the skin on) and sauerkraut make for a well-rounded meal.

 

Puffiza

 

The Puffiza is another way Spice and Cleaver has gotten inventive with its gastronomic offerings. Classic pizza toppings on a puff dough crust deliver superb texture and delicious flavor. The Miss Piggy (P399) combines a Kermit-inspired pesto alongside pork toppers like salami, Italian sausage, pork face, forest ham, and bacon. Another tasty puffiza is the Farmer's Ham and Onion (P420), which combines farmer’s ham with caramelized onion in white sauce.

Baked Camembert

 

Other standouts are the Big S Meatball Pasta (P310), a 250-gram sausage meatball with pomodoro (P310); a refreshing Caprese Salad (P295), which complements all the heavy fare quite well; and the Baked Camembert appetizer. If you’re turning away from anything too meaty, the (halibut) Fish & Chips make for a good alternative.

Cap off your meal with a surprisingly sweet-salty dessert, the blue cheese cheesecake with rosemary (P310), which comes with a lovely side of tomatoes with a crunchy sugar coating.

The Spice and Cleaver experience is fun, unique, and all about the food. Craft single malts, vodkas, gins, and beers are also on offer here. Our best tip is to get there early—the buzz on this hotspot is catching on and you’ll want to bring a big group to partake in this carnivore’s haven.
