The dishes we loved at Town & Country's Fabulous Food and Drink Affair

A lot of good food last night.

( Some of Manila's best chefs and classiest voracious eaters got together September 10 for a night of good food at Town & Country's fourth annual Fabulous Food Affair at Raffles and Fairmont Hotel.


Chefs presented explosions via bespoke bites that ranged from Chef Josh Boutwood's salted duck to Chef Carlos Garcia's shredded pork wraps to Chef Mark Tan's Angus sliders. It was a food-heavy affair, but here's a more digestible list of our favorites. 



Margarita Fores served taste bud-teasing, bite-sized portions of fork-tender lechon with perfectly crispy skin and a delicately sweet lychee-mango chutney on the side.




Colin MacKay's crab cakes were amazingly light and clean-tasting, the portion just right with its punch of flavor and crunchy breading.

The standout of the night was Chef Jordy Navarra's oysters, which he told us were flown in fresh from Aklan. Served on a bed of sea salt, the chef used nothing more than a few strips of cucumber to help bring out the oysters' briny, refreshing flavor.
