There's a new "chwaffle" in town, and they're great with milkshakes!

(SPOT.ph) Diane and Jesz Salazar are on a mission: to run Kapitolyo’s first American diner-inspired hole-in-the-wall. The sisters are on the right track with Diner on 16th. This hangout has undeniable traces of a typical diner: cool, retro fixtures, upbeat tunes, and affordable comfort food that can be split with a friend or two.

 

Not your usual Chicken Caesar Salad

 

Chef RD Robles may have helped the sisters come up with reinvented versions of nostalgic, all-American favorites, but they know that some classics are best left unadulterated. The Chicken Caesar Salad (P289), for example, is a whopping mix of lettuce, crisp bacon bits, and chicken strips. The greens are so fresh that you'll be relishing each crunchy bite. The salty, slightly honeyed bacon and peppery chicken only intensifies the flavors. 

 

The red accents and checkered details help channel that retro feel.

 

The Sriracha Wings with Ranch Dressing (P280) are a welcome surprise. The gargantuan pieces flaunt crispy skin, juicy meat, and strong, fiery flavors to the bone. Dunk your chicken into the ranch dressing (they make theirs using fermented milk!) to balance all those punchy notes.

Bourbon BBQ Beef Kabobs

 

For those who enjoy sweet, smoky, and tangy flavors in one go, the Bourbon BBQ Beef Kabobs (P230) is a popular choice. The bourbon barbecue sauce impressively and effortlessly brings together the contrasting flavors of the grilled beef and mushrooms.

 

Pot Roast Pork and Red Kidney Beans

 

If you're feeling adventurous, go for the Pot Roast Pork and Red Kidney Beans (P190). It's a rice bowl that merges the sensibilities of traditional liempo and a classic English pairing. The strips of pork are best highlighted with the green sauce (a beautiful medley of onion and parsley in a vinaigrette), with the beans cushioning the flavors.

Soy Ginger Glazed Chicken and Ube Waffles

 

If you could choose just one dish at Diner on 16th, however, we recommend the gourmet chicken and waffles, which the sisters offer in twists unique to their restaurant. They have Waffle Florentine (P265) and Soy Ginger Glazed Chicken and Ube Waffles (P249). They call their combination "chwaffle," not to be confused with a nearby restaurant's famous dessert.

The Waffle Florentine is a melt-in-your mouth spin on the classic chwaffle combination. It's derived from Eggs Florentine, which is Eggs Benedict with spinach. Poached eggs, ham, spinach, and hollandaise sauce all sit atop chunks of crispy golden waffles—made with Chef RD’s own sweet batter.

 

The Ginger Glazed Chicken and Ube Waffles is an unexpected but promising find. The ube component is unorthodox, but its nutty flavor makes the waffles not-too-sweet, beautifully working with the savory soy, garlic, and ginger profile of the dish.

 

Don’t leave without sampling their signature vanilla-based milkshakes. “Ours are overloaded,” says Diane. “[Each one] is Instagram-worthy.”

They have several kinds: Diner on 16th’s Original Milkshake (P162), which is packed with chocolate-coated pretzels and marshmallows, cream puffs, assorted syrups, a waffle cone, and some cotton candy; S’Mores (P134), a messy jumble of graham crackers, pretzels, marshmallows, and chocolate syrup; Cheesecake (P136), which comes with graham bits and real cheesecake and fruit pieces; and Caramel Popcorn (P133), served with a crisp waffle, caramel syrup, and some caramel-coated popcorn.  

 

While Diner on 16th may be fairly new to Kapitolyo's established dining scene, it knows how to draw attention as it enters the fray—with knockout, unique specialties.
