Madrid Fusion takes over SM Mega Fashion Hall

Fusion flavors infiltrate Mega Fashion Fall's broad range of restaurants.

( As the culinary community launches into Madrid Fusion fever, several restaurants at SM Mega Fashion Hall’s food emporium are expanding their menus and broadening their range to include brand new dishes. 


Chef and baker Johnlu Koa of The French Baker Salon de Thé demonstrated a quick and no-fail way to create Croque Monsieur and Croque Madame. Chef Ana Go of Vikings infused Filipino and Spanish flavors and textures with escargot, oyster-rich pasta, and a halo-halo- and turon-inspired cannoli. Meanwhile, Corporate Chef George Lizares of Abe sampled a sumptuously tangy sinantol na hipon and a brand new halo-halo creation to be launched in May (look forward to the turrones de casoy topper!). Chef Sonny Mariano of Alqueria created classic croquettes and an Asian-infused green curry paella. And Linguini Fini’s Chef Daniel Lachica merged local adobo and slated egg with a flavorful Italian Gremolata pasta.
