(SPOT.ph) If it’s “calm” and “relaxing” that you want, just a few streets away from Maginhawa's glorious frenzy is a gem of a place called Jet’s Bistro. Set to officially open today, November 11, it has already been attracting a steady stream of customers on its soft opening, all curious to experience what’s behind the elegant, unassuming French windows.
“This is actually a heritage restaurant,” owner Josh Versoza says. “It’s a dedication to our mother, who started Josiah’s Catering. It’s a thank you of the children to our mom.”
He’s talking about Jet Versoza, who, along with her husband, put up the famous catering service that has been in business for over two decades.
“A lot of our food items here are the staples—the bestsellers of Josiah’s Catering, just with a little modern twist to them,” Josh explains. “Take for instance this callos here. It’s actually my mother’s recipe, but my brother Jasper tweaked it to make it okay for dipping. The lengua is actually what we’re known for in the business. The sun-dried tomatoes pasta is also one of our bestsellers.”
Braised Oxtail and 78 Degree Poached Egg
The callos that Josh is referring to is the Braised Oxtail and 78 Degree Poached Egg (P275). It’s a thrill to puncture the egg and watch the yolk spread in the red wine and rosemary tomato puree. Dip a slice of bread into this perfection and you won’t be able to stop until the skillet is scraped clean.
Herbed White Local Cheese, Mushrooms, and Watercress
At the first bite of a slice of Herbed White Local Cheese, Mushrooms, and Watercress (P195), you’ll realize how the gentle nudge of truffle oil will put your taste buds in gear for the feast ahead. Despite all sorts of yummy piled on top of each garlic bread toast, you’ll be amazed at how light this dish is.
Corn Dusted Crispy Calamari
A forkful of the Corn Dusted Crispy Calamari (P195) will make you marvel at its delightful crunch. Josh calls it the polenta effect, polenta being an essential ingredient in making good pizza dough. The Cilantro Aioli rounds out the whole experience with fresh notes.
Roasted Local Squash Soup and Brandy Braised Fuji Apples
The lush creaminess of the Roasted Local Squash Soup and Brandy Braised Fuji Apples (P185), with its cinnamon spiced cream, charred leeks, and sage butter, will make you want to declare “mine!” and cradle the bowl to ward off eager spoons.
Burnt Peaches Salad with Braised Bacon and Goat Cheese
You won’t have any problem eating your veggies with the Burnt Peaches Salad with Braised Bacon and Goat Cheese (P395). The first forkful will get you nodding an enthusiastic “yes!” to more creamy cranberry dressing and toasted almonds, and the thick slabs of bacon will make you wonder if it’s a salad or a bacon dish. Since these guys also own Fat Daddy’s Smokehouse, you can bet the meats are premium!
Braised Beef Short Ribs and Mac ‘n’ Cheese
Got room for the entrees? You better! As one of us quips, the Braised Beef Short Ribs and Mac ‘n’ Cheese (P550) is like East meets West with a side of broccoli. It’s novel how you can pair macaroni laced with the sharpness of shaved parmesan with tender beef that practically falls off the bone.
Braised Beef Tongue
Here comes the lengua! The Braised Beef Tongue (P550) comes with horseradish whipped potatoes, crispy chorizo, and vegetable roast. Here’s our tip: Taste those tiny flowers nestling in radish puree and balsamic vinaigrette. Coming from the daisy family, these flowers are perfectly edible, with a sharp taste that lingers long after you’ve swallowed them.
Pan-Seared Pink Salmon and Mushroom Risotto
A spoonful into the Pan-Seared Pink Salmon and Mushroom Risotto (P550) and suddenly you’re nine years old all over again, fidgeting in your flower girl’s dress as you eagerly wait for your mom to load your plate with goodies from the buffet table. Besides the luscious salmon, Josiah’s Catering’s signature mango-butter sauce will bring back a rush of delicious memories.
Cilantro Marinated Grouper Fillet
The Cilantro Marinated Grouper Fillet (P450), with its cucumber and tomato salad and chili butter sauce, adds a spicy surprise with Sriracha whipped potatoes. Your mouth will definitely thank you for this unusual albeit harmonious pairing!
Herbed Roasted Half Chicken
You are excused for drooling at the mere whiff of the Herbed Roasted Half Chicken (P450), which comes with sautéed mushrooms, haricot verts, garlic whipped potatoes, and truffle gravy. You are not excused, though, for finishing the whole thing!
Pork a la Manille
Ideal for the hearty eater, the famous Pork a la Manille (P400) comes with mushroom rice pilaf, garlic bok choy, and three—yes, three!—sauces: liver, spiced vinegar, and apple puree. Our advice? Walk on the wild side with the apple puree; a single mouthful of a bit of it paired with some pork would convert you for life.
Homemade Spiced Pork Sausage
Sundried Tomato Pesto Pasta
Remember what we said about premium meats? The Homemade Spiced Pork Sausage (P450) is no exception. Enjoy it with the warm sauerkraut, beer braised lentils, and creamy potato salad, but please, please save space for pasta. Because we’re sure the Sundried Tomato Pesto Pasta (P350) will be a hit. With generous helpings of sautéed shrimps, mussels and calamari, the dish is sprinkled with shaved parmesan cheese. Don’t be selfish and share the delicious coil of pancetta, okay?
Truffled Fettucine Carbonara
What we like about the Truffled Fettucine Carbonara (P255) is how the truffle does not overwhelmingly hog the spotlight. Instead, we are allowed to enjoy the medley of delicious notes from the parma ham, roasted sweet potatoes, and parmesan cheese that come into play with every bite.
Apple Lava Cake
Sweet Balsamic Cheesecake
Complete the whole meal with dessert! Or should we say desserts? Take a break from the usual with some Apple Lava Cake (P150). Are you brave enough to try the Sweet Balsamic Cheesecake (P250)? Yes, you read that right, it’s got balsamic! It’s the reddish jelly under all that whipped cream, and it has that jolt of savory sourness that balances the light sweetness of the cheesecake.
With a relaxed ambience coupled with delicious food that’s both familiar and new at the same time, it's easy to see how Jet's Bistro could quickly become a delicious habit.
