It took 10 tries before Providore Backyard found the perfect hot dog

(SPOT.ph) “'All-around good vibes' is actually Providore’s tagline,” says Raintree Restaurant Group’s marketing head Mela Sison. It’s certainly difficult to feel anything else but good vibes when you chill at Providore’s alfresco dining area, Providore Backyard.
Providore Backyard’s look is an extension of the restaurant’s homey vibe. If Providore is dining room and kitchen, then the Backyard is, as its name implies, the backyard and garden. The décor is charming, with faux grass, wood tables and benches—the overall effect will remind you of lazy Sunday picnics. Since the space is open, there’s lots of sunlight to put you in a good mood or to help you with your social-media snaps, but it’s equally lovely after sunset, when the fairy lights overhead give the area a dreamy atmosphere.
Aside from sharing Providore's menu, Backyard has a hot dog bar and nachos station. Raintree Restaurant Group’s corporate chef Kalel Chan shares that he went through 10 hot dog taste-tests in the quest for the perfect sausage. “Gusto ko kasi there’s a certain bite, a certain smokiness to the hot dog,” shares the chef. Looks like Chef Kalel stumbled upon gold because the hot dogs here at Backyard have that delightful snappy bite to them, its salty-smoky flavor not overpowered even by the delicious heat of the steakhouse chili in the Cali-Dog (P295). The buttery soft buns are just the icing on top of the proverbial cake.
Steel Plate Nachos
The Steel Plate Nachos (P395) are the perfect hangout grub, especially when paired with the local, international, or draft beer Backyard has on offer. Overloaded with mozzarella, cheddar, grilled steak slices, jalapeño peppers, onions, spring onions, and black olives then topped with huge dollops of guacamole and sour cream, this plate is a feast for the eyes and the belly. Fun fact: This entire plate is baked in the oven before serving so the cheese is gooey and stretchy.
Beer Battered Seafood "Cocktail" Platter
“For Backyard’s menu, we really were just inspired by outdoor parties,” shares Mela. And no outdoor party, in our opinion, is complete without a plate of seafood appetizer, fresh and easy to munch on. That’s exactly what you’re getting with the Beer Battered Seafood “Cocktail” Platter (P595), which you can order both from Providore and Backyard. This platter is overflowing with golden-fried goodies: from mozzarella-stuffed shrimp and crispy calamari to beer-battered fish bites, blue swimmer crab, and baby tawilis. Most impressive is how the mild brininess only fresh seafood can provide is present here beneath the batter—though given how light yet crisp the coating is, maybe it’s not so surprising after all. Though seasoned enough so you wouldn’t need them, this platter is served with Louisiana hot sauce, classic tartar sauce, and a punchy “cocktail” sauce.
Since the alfresco area can be accessed outside SM Aura, they’re open as early as 8 a.m. We can’t think of a better way to start the day than by having a plate of Big Boy (P375) while enjoying the crisp morning air. This meal has a poached egg with a perfectly runny yolk that coats the potatoes underneath it with richness, ultra-crispy bacon, and a peppery sausage patty. But the real scene-stealer here is the French toast—two hefty slices served with maple bacon syrup. It’s no surprise, considering Providore bakes their bread in-house.
Steel Plate Cooked Garlic Butter "Salpicao"
If you’re in the mood for Filipino, you can have the Steel Plate Cooked Garlic Butter “Salpicao” Steak (P395) from Providore and have it served outside. It's a winner anywhere you have it. Thin strips of beef are cooked in a special sauce with roasted garlic, but we feel it’s the butter that really takes this dish to the next level—just the right amount of indulgent flavor without crossing to umay territory. You’ll want to have this with rice.
Dinuguan & Puto
The Dinuguan & Puto (P295) is also not to be missed, if only for the buttery, soft puto that’s topped with salted egg. You’ll want an entire plate to munch on their own and another to soak in the thick tart gravy of the dinuguan.
Coconut Cream Tres Leches
Housemade Apple Pie a la Mode
End on a sweet note with Providore’s Coconut Cream Tres Leches (P250), sweet, milky, and melt-in-your-mouth delicious. But don’t overlook the Housemade Apple Pie a la Mode (P250)—there’s just something about warm pie and cool ice cream (this one’s mantecado-flavored) that will remind you of home.
Providore Backyard also makes a strong case for daytime drinking with their all-day cocktails. You won’t find fancy out-of-the-box drinks here, just classic mixes that are refreshing with a kick. If becoming a tita involves Backyard’s Sangria (P275/glass, P995/pitcher), then we can’t find it in ourselves to complain while the Berry Margarita (P225/glass, P825/pitcher), made with fresh berry puree, is that kind of dangerous drink that’ll make you forget it has alcohol because of how sweet and fruity it is.
Providore Backyard is the perfect escape from busy city life. It’s easy to forget your quickly piling-up mound of work as you chill with a glass of sangria and a hot dog under the twinkle of fairy lights, if only for a little while. No stress, just good vibes.
