If you haven’t, you and your sweet tooth are missing out—not only is their famous Nono's Chocolate Oblivion pure chocolate bliss, with powdered cocoa, whipped chocolate cream, and caramelized crushed toffee, but Chef Baba Ibazeta-Benedicto also whips up other cakes, plus cupcakes and cookies that are worth every calorie.
It’s no surprise that the dessert shop is celebrating their 10th anniversary this month. And what’s a birthday without cake? At Classic Confections, Chef Baba is celebrating with not just one, but six new cakes, launched in time for the coming holiday season.
Meline's Chocolate Cake
Naked Red Velvet Cake
While it’s hard to turn away from the Chocolate Oblivion, you might find a new favorite with Meline’s Chocolate Cake (P895). Named after Chef Baba’s yaya who helped raised her, this cake stays true to the classic with a moist chocolate cake topped with chocolate fudge icing. Another classic-with-a-twist is the Naked Red Velvet Cake (P895), with layers of red velvet cake and cream cheese frosting.
At both Classic Confections and her other restaurant, Nono’s, Chef Baba shows that she loves adding an updated, more mature twist to childhood favorites, like with the S’mores Tart (P725). Be prepared to get your hands sticky with the toasted marshmallow icing, generously piled on a graham cracker crust and chocolate custard.
