Ube Lovers, Ube Champorado Is a Breakfast Staple You Should Have Tried by Now

(SPOT.ph) Ube may be a Pinoy staple that has been around since what seems like forever, but this hasn't stopped restaurants (even those abroad!) from playing around with purple yam. If you can't get enough of ube, why not have it to start your day? Ube champorado switches the traditional tablea chocolate for ube, for a fun twist on a classic dish. It's new enough to be exciting, but still tastes very familiar, so we're super stoked restaurants are starting to offer it. Here's to hoping we see more of this yummy breakfast food!
Cha Cha's Beach Café
Perhaps one of the first restaurants to offer ube champorado, Cha Cha's Beach Café is the café and breakfast hub of Coast Boracay. Their Ube Champorado (P195) has rich ube blended with white chocolate, topped with salty danggit, and served with milk and toasted coconut flakes on the side. With Boracay's temporary closure, their Ube Champorado finds a new home at Providore for a limited-time only.
Providore is at G/F SM Aura Premier, Bonifacio Global City.
Flossom isn't just buzzy because of their gorgeous floral interiors; their Ube Champorado (P280) has became famous on social media, too, with its bright purple hue and colorful toppings. This champorado boasts a nuttier flavor because of the purple yam, with yema sauce and a generous topping of dilis, giving this bowl a delightful sweet-salty flavor profile.

Manam recently launched a breakfast-menu exclusive to their Bonifacio Global City and Greenbelt branches, which includes a sumptuous Ube Champorado (P155). Their version is rich and nutty, with a generous topping of crispy tuyo to round out its sweetness.

For something a little out of the ordinary, drop by The Fat Seed Café + Roastery and have their Buttermilk Fried Chicken With Ube Waffles and Salted Egg Sauce (P325). As if the contrast of sweet-earthy waffles and the lip-smacking rich and savory salted-egg sauce isn't enough, this hearty breakfast meal also comes with bacon-maple syrup.
