(SPOT.ph) Ah, the humble chicken inasal. The dish is somehow homey yet celebratory, familiar yet exciting all at once—this is typical of Filipino cuisine in general, but this beauty hails from Bacolod. So we tried to do right by the colorful city when making our Top 10 Chicken Inasal list, ranking based on the balance of tang, smokiness, and overall savoriness, as well as the general texture of the meat and skin.
Just one of the takes on the dish which truly captured our hearts include Sarsa’s version, which is closer to the ideal, albeit saltier than what might be considered traditional. Negros Inasal Express is a standout in tanginess and char, though Bacolod Chicken House runs right past it with hints of ginger and lemongrass.
Taking the top spot once again is JT’s Manukan Grille, with its fresh-off-the-grill realness, great balance of flavor, and the “option” (wink, wink) of extra chicken oil. All these cement their take on the chicken inasal firmly in first place.
But whichever one you go with, these chicken dinners make us all winners.
