This Corned Beef Omelette from Yardstick Hides a Korean Twist

It's inspired by a classic sandwich!

(SPOT.ph) Breakfast food is having its moment in the sun, so to speak, and we’re here for it. From all-day breakfast joints to special menus, the most important meal of the day has gone from tita to tout le monde—practically everyone’s into it. Hardly anyone turns down a well-made omelette, for instance, and Yardstick’s newest offering doesn’t hold back: The Reuben Omelette goes for P290, and it’s covered in pastrami and corned beef. If it sounds hefty, it should be—it’s breakfast, after all—but the secret to cutting through that is the sour-spicy kick of kimchi.

The omelette is inspired by the Reuben sandwich, which is traditionally made with thick layers of either pastrami or corned beef, plus one layer of sauerkraut.
