Gorgonzola is a type of blue cheese hailing from Italy that's milder than other blue cheeses. Here, Kalea Tarta imbues their signature Basque burnt cheesecake with gorgonzola, then lathers on a gorgonzola frosting for extra creaminess. The gorgonzola works wonders in this cheesecake, contributing its signature buttery-yet-slightly sharp flavor in such a way that tickles the taste buds just enough without overpowering the other elements.
