We May Have Found the Creamiest Basque Burnt Cheesecake Ever

From the chefs of one of Manila's best restaurants!

(SPOT.ph) You've no doubt seen Basque burnt cheesecakes on your feed lately—and we've had lots of great versions of it for sure, but one in particular stands out. Chef Chele's Kitchen makes a special Burnt Basque Cheesecake (P950/6.5 inches, P1,550/8.5 inches) that's both light and yet oh-so-creamy.

Chef Chele's Kitchen recommends serving the Burnt Basque Cheesecake warm or at room temperature within the day you receive it—that way, you get a molten, lava-like center that's the stuff of dreams—but you can also serve it cold, which renders it firmer but still creamy as can be. It's barely sweet, allowing the cheese to shine; you get a beautiful contrast between the creamy cheese and the burnt top, too. These cheesecakes are baked to order fresh daily for the best quality, and they recommend consuming it the same day.

Chef Chele's Kitchen is a venture by chef Chele Gonzalez of Gallery by Chele and wife Teri Gonzalez, who enjoy cooking and baking together in their home kitchen. "This is our first 'baby' because we want to share the same joy & happiness we experience in every bite with everyone," shares Teri in a statement. Chele learned how to make traditional Basque-style cheesecakes in San Sebastian, eventually making adjustments to make it his and Teri's own. Take it from us: they definitely succeeded in making it a totally special dessert.
