(SPOT.ph) Fried rice is the unsung hero of the food world. It's the kind of meal you can have for breakfast, lunch, or dinner, and it's a great way to use up leftover rice and other bits and bobs you've got in the fridge. It's also incredibly versatile—while some versions (like Chinese yang chow) are common, you can really flavor it many different ways—and even pattern it after other dishes! "We really wanted to celebrate rice and how it's an essential part of the average Filipino's meal," shares Mad Eats co-founder Andie Cruz. "We felt that there are not a lot of brands who focus on fried rice as a general concept, or do so with a specific cuisine in mind—so we wanted to create a menu focused on just fried rice, ambiguous to any particular cuisine."

Cruz shares that they make it a point to do classic fried-rice dishes "for those that just want something comforting"—and with that, you'll find familiar favorites like the Longganisa Hash Fried Nice (P195) topped with a fried egg, atchara, and savory, garlicky crumbled longganisa, as well as the Sun-Dried Tapa Fried Nice (P220) that highlights sun-dried tapa with a fried egg and atchara.

But it's also worth exploring their more experimental fried-rice dishes—after all, Cruz shares that Fried Nice is their "playground to experiment" with more inventive takes on the dish. There's the Crispy Pork Sinigang Fried Nice (P250) that's got crisp-tender piece triple-fried crisp pork belly and crisped-up kangkong on slightly-tangy sinigang rice, as well as the ingenious Palabok Fried Nice (P255) with shrimp, crab fat, tomato, egg, optional chicharon, and tinapa on palabok rice.

They cover other cuisines too—a stellar option is the Seafood Laksa Fried Nice (P310), which carries the spiced and seafood-y profile of the original Southeast-Asian dish with its combo of squid, fish cakes, bean sprouts, leeks, and coconut-curry rice. And while the rice dishes are plenty tasty on their own, you can also spike the flavors up with their special sauces (P35 each)—choose from the ChimuchurriSpice PasteChili Oil, or Garlic Vinegar.

The rice theme carries over to desserts, too, with their line of sticky-rice rolls that have sweet, porridge-like sticky rice rolled in spring-roll wrappers, deep-fried to a crisp, coated in a lush caramel, and served with a milk sauce with latik and sesame seeds. You can take your pick from the suman-at-mangga esque Sticky Mango Rolls (P165), or the wonderfully dark Sticky Champorado Rolls (P155).
